Anyway, this salad came out AMAZING! I'm starting to realize that happens a lot when you simply put fresh, in season, yummy ingredients together which is basically all I did.
It may sound like a weird combo, but the sweet blueberry with the creamy bean and the crisp corn was simply perfect. All I did was add a simple dressing to bring them all together. Oh! And the mint... the mint made it so fresh and summery!
Here's what I did...
Ingredients
- 2 tablespoon apple cider vinegar
- 2 tablespoon red wine vinegar
- 1 tablespoon olive oil
- 1 tablespoon honey
- ¼ teaspoon kosher salt
- 1 pint fresh blueberries
- 1 can great northern beans, drained and rinsed
- Corn from 2 ears (~1 cup canned corn would work, too)
- Small handful of fresh mint leaves (~2g)
Instructions
Put the vinegars, oil, honey, and salt in a large bowl and whisk.
Add the remaining ingredients.
Toss.
That it!
It made 3 servings just about 1 and ¼ cups each.
(I added a bit more mint to make the photo pretty.)
I ate another serving today and have one more in the fridge for tomorrow!

Ingredients

This stuff is CRACK! I didn't have corn, so i used frozen peas... also used frozen blueberries and no northern beans, so I used pinto and i added shaved almonds... i'll be getting your ingredients and making again and again... also good with little crackers mixed in.

Yum! I had my own version of this for lunch and it was super good.
