I was in "clean-out-fridge" mode as we prepared for our yearly family beach outing and there was a pile of lettuce greens staring me in the face every time I opened the door.
I didn't have much else besides some cherry tomatoes from the farm.
Wait. A. Minute.
Lettuce? Tomato?
All I'm missing is bacon!
That's how my brain works and before I knew it I was noshing on this simply yummy salad.
The dressing I whipped up added a lot of flavor and really jazzed up a simple pile 'o lettuce perfectly.
I wanted to add a bit of shredded Cheddar but all I had was sliced muenster so I folded it a few times and cut it into small slivers to mimic "shredded" cheese. It worked great!
Here's what I did...
Ingredients
- 2 tablespoon real bacon bits (14g)
- 1 teaspoon olive oil (5g)
- 2 tablespoon red wine vinegar
- â…• tsp Worcestershire sauce
- 1 tbsp honey (21g)
- Pinch of salt
- Pile of mixed salad greens
- About 10 cherry tomatoes
- 1 slice of muenster cheese, cut into small slivers (¾ oz)
Instructions
In a small bowl whisk the bacon bits, oil, vinegar, Worcestershire sauce, honey and salt together.
Set aside.
Pile the lettuce on a plate, top with the tomatoes and cheese.
Drizzle on the dressing and enjoy!

YUM! I just made my version of a BLT salad a couple weeks ago. Same concept but I used thick peppered bacon and my favorite Ranch! Totally worked for my BLT craving without the bread.
