I was going to post this idea real quick on IG, but it ended up being so simple and so good I decided it needed a post because I don't want to forget it!
The nutritional profile for my goals is spot on too - nearly equal protein and carbs with the right balance of fat.
Next time I would make the dressing a little thicker but other than that. This was the perfect lunch for me.

Beet, Carrot and Turkey Salad with a Goat Cheese Drizzle
Beet, Carrot, and Turkey Salad with a Goat Cheese Drizzle is the fastest, tastiest salad ever! All you need is five minutes and five ingredients.
Ingredients
- 4 cooked beets
- 4 oz cooked turkey breast
- 1 carrot
- 1 green onion
- 1 oz crumbled goat cheese
- pinch of salt and pepper
- 1-2 tablespoon of water
Instructions
- Quarter the beets, then half each quarter.4 cooked beets
- Cut the turkey into bite-sized chunks.4 oz cooked turkey breast
- Chop the carrots small.1 carrot
- Chop the green onion.1 green onion
- Arrange all the cut ingredients on the plate.
- Add a splash of water to the goat cheese with a pinch of salt and pepper and mix until creamy. Add additional water to get to the consistency you like.1 oz crumbled goat cheese, pinch of salt and pepper, 1-2 tablespoon of water
- Drizzle the goat cheese on top of the salad.
- Enjoy!
Notes
- I used one of the precooked pillow packs of beets. Works great and easy to keep on hand. Canned beets would work too!Â
- I usually keep a cooked turkey breast on hand for a quick protein option but any cooked chicken or turkey would be great in this.Â
