Beet, Carrot and Turkey Salad with the Quickest Goat Cheese Dressing Ever!

I was going to post this idea real quick on IG, but it ended up being so simple and so good I decided it needed a post because I don't want to forget it!

The nutritional profile for my goals is spot on too - nearly equal protein and carbs with the right balance of fat.

Next time I would make the dressing a little thicker but other than that. This was the perfect lunch for me.

In other news, I added a Weight Loss Macro Calculator on the site for those that want a starting point for their macro goals. I'm starting to track again so I was inspired. 🙂

Beet, Carrot and Turkey Salad with a Goat Cheese Drizzle

Beet, Carrot, and Turkey Salad with a Goat Cheese Drizzle is the fastest, tastiest salad ever! All you need is five minutes and five ingredients.

Ingredients

  • 4 cooked beets
  • 4 oz cooked turkey breast
  • 1 carrot
  • 1 green onion
  • 1 oz crumbled goat cheese 
  • pinch of salt and pepper
  • 1-2 tbsp of water

Instructions

Quarter the beets, then half each quarter.

Cut the turkey into bite-sized chunks.

Chop the carrots small.

Chop the green onion.

Arrange all the cut ingredients on the plate.

Add a splash of water to the goat cheese with a pinch of salt and pepper and mix until creamy. Add additional water to get to the consistency you like.

Drizzle the goat cheese on top of the salad.

Enjoy!

Notes

  • I used one of the precooked pillow packs of beets. Works great and easy to keep on hand. Canned beets would work too! 
  • I usually keep a cooked turkey breast on hand for a quick protein option but any cooked chicken or turkey would be great in this.
