BBQ Pita Pizza

I LOVE bar style food and these little guys made me feel like I was being "bad" when I was actually being "good". Loose terms I know but you know that i mean. ;~)

Armed with leftover turkey from Christmas and stale pitas I put these together. YUM! Is all I can say!

Ingredients

  • 2 small or 1 large whole wheat pitas
  • 1 tablespoon BBQ sauce
  • 2 oz leftover turkey (or chicken even short cuts would work)
  • about ¼ cup diced bell pepper (I used an orange one)
  • 1 oz light (2%) Cheddar cheese shredded

Instructions

Preheat the oven to 425 degrees.

Use a BBQ brush to spread the BBQ sauce into the nook and crannies of the pita.

Top with the turkey, bell peppers and cheese.

Bake about 10 minutes.

Here's a little before and after cooking shot. Just be warned the "light" cheddar never really looks like it melts but it's pretty good!

    I had a hankering for pizza tonight and I found this recipe, its SO good. I made mine with a WW pita and southwest-chicken-purdue short cuts. DELICIOUS, and very filling. 2 plus some veggies and thats a great meal.

    even my gluton, eat anything he wants and stays skinny boyfriend, loved them too.

    What a great idea! I've already been using the Western Bagel Alternative Pita (1 point each) for pizza crust for a while. I never thought of making one with bbq sauce though. This will definitely be going on my To Try list for next week. 🙂
