
The kids have a snow day here in Maryland, so I asked the 7-Year-Old if he wanted a special snow-day breakfast.
His response?
Snowflake Pancakes.
Me: You mean a pancake shaped like a snowflake?
Him: Yes! You could drizzle the batter and make a snowflake.
Me: Ok, I'll try! That's a fun challenge.
Him: While you do that I'll make a craft for you.
Me: Deal!
My first attempt, not so pretty.
Second attempt, better, but more star-like than snowflake-like.
After that, I decided to make regular old pancakes. I just don't think the snowflake was going to happen.
He said that it was ok and it's looked like a cool octopus man.
As long as he's eating a healthy breakfast, I don't really care.
We split these Banana Protein Pancakes for breakfast, and I enjoyed mine topped with a little Peanut Butter paste I make by mixing peanut butter flour and water. I was too rushed to take a photo, but if I make them again, I'll share it on IG.
I'm starting to get more detailed with my macros again. I've been training pretty hard at the gym lately so I'm trying to keep my protein-intake up there. The Banana Protein Pancakes were my post-workout meal before work and it hit the spot.

Banana Protein Pancakes
Ingredients
- 2 scoops Unflavored Whey Protein 30g
- ½ cup 30 g Sprouted Wheat Flour 100% Whole Grain
- ¼ teaspoon Baking Powder
- 1 ripe banana mashed 100g
- 2 fluid ounce unsweetened almond milk
- 1 large Egg
- 2 teaspoon vanilla extract
Instructions
- Heat a non-stick skillet or griddle over medium.
- Whisk the whey, flour, and baking powder together. Set aside.½ cup 30 g Sprouted Wheat Flour 100% Whole Grain, ¼ teaspoon Baking Powder, 2 scoops Unflavored Whey Protein
- Mash the banana in another bowl. Whisk in almond milk, egg, and vanilla until frothy.1 ripe banana mashed, 2 fluid ounce unsweetened almond milk, 1 large, 2 teaspoon vanilla extract
- Pour the dry ingredients into the wet and mix until just combined.
- Pour ½ cup of the batter on the griddle.
- Makes 6 pancakes.
Notes
- I used this sprouted flour.
- I used this unflavored whey.
- You could use oat flour or a mix in this. I just kept it simple.
- I'm providing the nutritional info per cake to keep it simple. This morning I enjoyed 3 with a little PB2 and it was a fantastic breakfast!

i am in Gaithersburg, but i have lived all over. i hope you all enjoyed the snow day -- i think the kiddos will have several days to enjoy what got dropped on us!
