    Apple Spinach Slaw

    We're home from the beach! We had an amazing week -- click here for a few photos -- but boy am I glad to be back home in my kitchen. My body is seriously craving some vegetables!

    Of course The Husband wanted to order in tonight for dinner. I get it. It was a long day. We have no food in the fridge. The house is a mess. The kids have been on our last nerve.

    It makes sense, but I couldn't do it. I needed to eat something I made at home and it had to be light. I literally started the day with a humongous slice of 3 Brothers pizza and a Kohrs custard cone, both of which constituted 75 percent of my diet for the past week.

    I'm so over it!

    So I ran out to run a few errands and picked up this bag of cole slaw mix for a quick salad.

    It was $2 and I used to make it the most amazing slaw ever! Honestly, I almost ate the whole bowl one serving at a time.

    I love buying heads of cabbage but boy these bags come in handy when you're feeling lazy. And really, what's the difference? It's just handy cabbage and carrots all cleaned and cut for you!

    Here's what I did...

    Ingredients

    • 1 16 oz bag of cole slaw mix
    • 100g of spinach
    • 1 medium delicious apple
    • 3 tablespoon apple cider vinegar
    • 3 tablespoon lemon juice
    • 2 tablespoon honey (42g)
    • 1 tablespoon olive oil
    • ½ teaspoon kosher salt

    Instructions

    Pour the bag of slaw mix in a large bowl.

    Chop the spinach in thin strips.

    Slice the apple thin. You could make sticks but I left then larger. I wanted them to stand out from the cabbage.

    Add the spinach and apple to the bowl and set aside.

    In another bowl, whisk together the vinegar, lemon juice, oil, honey, and salt to make the dressing.

    Pour the dressing over the apples, spinach and slaw. Toss.

    Cover and refrigerate for at least 30 minutes.

    Enjoy!

    I'm basing the servings on the bag of cole slaw mix. They claim 5 - 2 cup servings.

      I just stumbled across your website and I'm in love - thanks! I'm a Texan living in a remote part of Russia where fresh fruits and veggies are often difficult to find, do you think this would work at all with frozen spinach? Any tips you may have on healthy eating from the freezer section (fruits & veggies, of course) are welcome!

        Hi Candy! Unfortunately I don't think frozen spinach would work with this but I use frozen all the time in stir-fries and even salads like this one... https://greenlitebites.com/2013/07/31/kidney-bean-salad-pantry/

        The only thing I'd warn agains is frozen greens, they just don't act the same as fresh.

      I have come back to your site after a while and the apple spinach slaw recipe looked so yummy so I decided to print it and take the recipe to the grocery store with me. What happened to just being able to print only the recipe and the picture as I could in the past? I ended up with 6 pages in color. I can't afford that and do not want all the extra paper. I also do not want to pin it. I want to print it to put in my favorite recipe binder I keep in my kitchen. I would appreciate it if you would tell me how to print just the recipe with the picture. Thanks.

        I'm working on. The new design messed things up a bit. You can always copy and paste into word. I know it's now the easiest thing to do but will work in a pinch.

      Boy, I know that vegetable craving feeling, I get it ever time my in-laws visit. I really like how you presented this recipe, and the nutrition info at the end is very helpful. Also, thanks for the reminder to refrigerate for half an hour, so many salad chefs forget to do that (self included).

      I make a similar coleslaw with sliced apples, dried cranberries, a little mustard, apple cider vinegar and walnut oil. I like the idea of adding spinach!

      We sometimes take the soft option of take out, especially after a big day out. Usually we do what you have done here and make something up that is fresher and healthier.
      The good part is that it gives the pantry a good clean out (it's amazing what you find hidden away).
      It also can make you more creative when trying to prepare a quick meal with limited ingredients 🙂
