Maybe I’m crazy but hear me out on this one. I’ve been eating this for the past couple of weeks, and I’ve fallen in love.
This semester, my morning is super tight. I have precisely forty-five minutes from the time I get home from the gym to get the kids on track, make breakfast, and take a shower before driving the 13-Year-Old off to middle school. Then I head directly to campus and have about thirty minutes before my first class starts. It’s not a terrible schedule. It works out great, but I have less time than I did last semester, so it took some getting used to it. Once classes started, I realized real fast I wasn’t going to have time to whip up my favorite morning smoothie or make eggs.
That’s when I thought of “Yelatin.” Those of you who’ve been with me since my early blogging days may remember this idea. Back then I was all about low-calorie, so I was into things like sugar-free jello. Yelatin was a made-up name for jello made by replacing the cup of cold water with a cup of non-fat yogurt. It’s fun and tasty, but I pretty much phased it out of my diet as I reduced my intake of artificial sweeteners.
Well, now I’m using the yelatin idea to make-ahead a tasty, fun dessert-like breakfast for my busy mornings. Adding frozen berries gives it an almost decadent texture and I love to enjoy it on my morning commute. Here’s what I do…
Yield 4 servings
Protein Jello is a protein-filled breakfast (20g) with endless flavor possibilities. Make on the weekend for those busy week day mornings!
- 1 cup non-fat Greek yogurt (255g)
- 4 scoops unflavored whey (like this)
- 1 3oz packet of a berry flavored gelatin dessert
- 1 cup boiling water
- 1 cup mixed berries
Mix the yogurt and whey protein until smooth. Set aside.
Dissolve the jello in the boiling water by whisking. Once you don't see any more powdered jello, whisk in the whey yogurt mixture and stir until combined.
Pour the mixture evenly into four separate containers. Top each one with 1/4 cup of berries.
Place the containers in the fridge for at least 2 hours or overnight to set.
Grab and go when you are ready for breakfast!
- I used strawberry jello, blueberries, and raspberries but you could do any combo of flavors and fruit!
- My berries were frozen so they do have that defrosted frozen berry texture. I actually enjoy that in the jello. It adds a fun texture.
- I used regular jello with sugar but if you wanted to lower the carbs you could go sugar-free.
- My favorite unflavored whey is Naked. You could use any brand you like. Recipes like this is why I stick with unflavored. I don't want to be tied to vanilla or chocolate or whatever. When it's unflavored I could use and sweeten it any way I like.
- You could up the protein a bit more by upping the whey but I didn't want it to start tasting to whey-like if that makes sense.
- If you aren't into the protien as much, skip the whey! It's super yummy with just yogurt.
