I’m not sure if this will be a crowd pleaser, but I liked it and thought I’d share in hopes it inspires you to have some fun with kale.
I loved the combination of sweet pear, earthy kale, salty bacon bits and creamy hummus. The only issue with the wrap was moisture. I think if I cooked down the kale a little more it wouldn’t have been an issue, but even as messy as it was I’d make it again in a heartbeat.
Here’s how I made it today. 
- 1 thick slice of sweet onion chopped
- 2 cups of kale chopped (80g)
- 1 ripe pear cubed
- kosher salt
- 1 tbsp bacon bits (7g)
- 1 large low carb tortilla (I used a La Tortilla Factory Smart and Delicious
)
- 2 tbsp hummus (28g)
Brown the onion in a non-stick skillet over medium-high. Add the kale and the pear with a pinch of salt to help draw out the moisture. Toss every few minutes as the kale wilts down. Add the bacon bits and cook until the kale is soft and tender and the pear begins to brown.

Meanwhile smear the hummus on the tortilla

Top with the kale/pear mixture.

Roll like a burrito and enjoy!

Amazing combo!
Love the fiber and protein combo – I just haven’t found my “like” of kale yet… tried it twice and it’s just toooooo earthy! Keep coming up with them!!!
Made this tonight without looking at the recipe and made some adjustments. I made a wilted kale and pear salad with 1 strip of bacon. Forgot the onion which I won’t do again!! It was sooooo good and so low calorie (about 215). The pear is amazing with the kale and so nutritionally powerful. I owe you big time for this one.
Wow! 23 grams of fiber? That’s impressive. And I never would have thought of pairing up kale with pear, but it sounds like a great combo.
