Between this and this I’ll never make tuna with mayo again. Not that I was making it very often, as I hate (despise would be a better word) mayo. There’s only one sandwich I use it on (this one) and I use so little, one jar would last me a lifetime.
Anyway, my goal isn’t to bash mayo, it’s to give you new ideas and I hope this one inspires you.
I just whipped up a Guacatuna Salad Sandwich. Well, at least that’s what I’m calling it. I’ve never been a big guacamole fan, but dude… mix some mashed up avocado in tuna and YUM! This sandwich was flavorful and satisfying. Now that I’m keeping more avocado around for Little Bean I can see this becoming one of my go-to lunches.
Here’s what I did…
- 1 oz (28g) of avocado
- 2 tbsp (28g) Salsa
- 1/4 tsp cumin
- 1/4 tsp chili powder
- 1/4 tsp dried cilantro
- 1/8 tsp kosher salt
- 1/2 tsp lime juice (lemon would be fine)
- 5oz can of light tuna drained well
Scoop out the avocado and mash.
Add the rest of the ingredients and mix well.
I ate mine on a sandwich thin, but you could stuff a pita, top a salad, or even roll in large lettuce leaves.
