Sorry for my short hiatus… AGAIN. I’m still adjusting to baby and trying to figure out a schedule now that Little Guy is home. Posting should become a bit more consistent now and I (we) even recorded a video today! I should have it ready tomorrow. Thanks for being patient with me as I find my groove again.

Anyway, enough “business.” I can’t wait to tell you about this AWESOME salad I made today. It was so easy and SO tasty!! I’m becoming addicted to fresh herbs. I cannot believe how much fun they are to use! Chickpea and Tomato Salad with Fresh Basil

Today I plucked from my basil plant and made this bean salad really quick. It was amazingly flavorful and filling!

  • 1 can chickpeas, drained and rinsed
  • About 1 pint grape tomatoes, halved
  • 25 large basil leaves, chopped
  • 3 cloves of garlic, minced
  • 1 tbsp red wine vinegar
  • 1 tbsp apple cider vinegar
  • 2 tsp olive oil
  • 1/2 tbsp honey (10g)
  • pinch of salt

Toss all ingredients together and chill for at least 20 minutes, allowing all the flavors to merge.

Then EAT!

Can’t get any simpler than that. :)

My mouth is watering just looking at the picture! I also have a very picky man. But we’re going camping with friends in a few weekends. Maybe I can make and bring some then :)

I made this and it was AWESOME. I will definitely make this again. I had never had fresh basil before, and WHAT A DIFFERENCE!

This recipe was AMAZING! I made it this week and not only did I love it, but so did my husband and my 2 year old! This was totally a hit in our house-although I like the idea of adding red onion to it and think I will try that next time.
A note for those making this-the basil in mine sort of wilted when it was stored overnight. It still tasted delicious, but I think next time I will keep the basil separate until ready to eat. But even with the wilted basil it was delish!

I made this last night for friends and they went crazy over this refreshing summer salad.
woke up this morning and made it again just for me.
    Wonderful wonderful thank you Roni

I love the look of this salad. My girls both love tomatoes & garbanzo beans! I’m planning on taking this to our 4th of July celebration so that there will be something besides Red Vines that they’ll eat with the BBQ. :)

OMG! This was so good! We had it for dinner tonight, it is all we had. I didn’t have the exact same ingredients on hand, so I used tarragon vinegar and garlic flavored wine vinegar. I also added sliced black olives and feta cheese. You have to try it!

I jumped up out of my seat and just went to make this. Had a few bites and it is really good. I have a feeling that one it sits in the fridge for a few hours, the flavors will come through even more. :)

LOVE this salad perfect for the summer! I have an abundance of tomatoes and basil in my garden right now! Can’t wait to give this a try!

I followed this recipe exactly and served it with grilled tuna steaks with grilled assorted peppers and onions and it was excellent! This is one dish I’ll be making again. I loved the slight bit of bite from the fresh garlic… soooo yummy!

Thinking about adding couscous to the salad and a yellow bell pepper. I wonder if anybody else has done any substituting any of the other ingredients or changed it?

  12. Becca

Love this!! I substituted the basil for fresh cilantro and it was **awesome**–will definitely be making it both ways!

This looks so so good! I am going to make it, but I don’t like basil or cilantro for that matter..any suggestions as to what would work just as well with this…

The fresh herb is what flavors it the most so go with your favorite. You can always skip it and then you’d have just a garlic chick pea salad.

This was even better than I expected. It will go into my rotation for sure. I think the dressing would also be great over a caprese salad. Thanks for a fabulous recipe.

I made this last night and my husband and I loved it. I cooked a cup of quinoa, added the quinoa and tripled the dressing amount so that the quinoa wasn’t dry. It was a great light dinner and refreshing lunch today, I’ll be making this one again for sure.

Question: I’m a bit of a newbie in the use of chickpeas but trying to diversity my diet. I opened up my can of chickpeas and proceeded to rinse and all of the skins came off the chickpeas. Am I supposed to leave those in or clear them all off? I spent about half and hour taking them all off. Help?

Looks delicious!! Can’t wait to make it! Any suggestions on substitutions for the honey? Not a big fan of it and I don’t want to buy a whole container just for 1/2 tbsp. Thanks :)

I have made this recipe twice now and it is delicious! It’s a new way to use tomatoes with basil. It works great as a side, and I have also eaten it for lunch with mozzerella and sliced turkey thrown in. Thanks!

Rebekah – A little agave, sugar, splenda, whatever your fav sweetener is should work. Just a bit to break the bite of the vinegar.

Inspired by your blog. Have a 2 1/2 year old so I don’t get much time on the computer but that is changing. Am 42 and my beloved body is processing food differently…also lifestyle changes…new season. Am changing my (and our) eating habits. Again, inspired by your blog. Thanks for it. Jen

Delish! Just made this. Will definitely be one that I will make again – and again – and again!! Thanks!!! Always looking for good vegetarian recipes. I too have never heard of too much garlic :)

So pretty! I was so excited to make this, I made it 2 days too early for my pot luck at work. Will it keep in the fridge?
