Chickpea and Tomato Salad with Fresh Basil

Sorry for my short hiatus… AGAIN. I’m still adjusting to baby and trying to figure out a schedule now that Little Guy is home. Posting should become a bit more consistent now and I (we) even recorded a video today! I should have it ready tomorrow. Thanks for being patient with me as I find my groove again.

Anyway, enough "business." I can’t wait to tell you about this AWESOME salad I made today. It was so easy and SO tasty!! I’m becoming addicted to fresh herbs. I cannot believe how much fun they are to use! Chickpea and Tomato Salad with Fresh Basil

Today I plucked from my basil plant and made this bean salad really quick. It was amazingly flavorful and filling!

  • 1 can chickpeas, drained and rinsed
  • About 1 pint grape tomatoes, halved
  • 25 large basil leaves, chopped
  • 3 cloves of garlic, minced
  • 1 tbsp red wine vinegar
  • 1 tbsp apple cider vinegar
  • 2 tsp olive oil
  • 1/2 tbsp honey (10g)
  • pinch of salt

Toss all ingredients together and chill for at least 20 minutes, allowing all the flavors to merge.

Then EAT!

Can’t get any simpler than that. :)

    My mouth is watering just looking at the picture! I also have a very picky man. But we’re going camping with friends in a few weekends. Maybe I can make and bring some then :)

    Sounds so fresh and yummy! We have regular basil and lemon basil in our garden and I’m so excited to try the different varieties with different foods.

    Yum, I just made something similar from Whole Foods website with broccoli, kale (I subbed chard), chickpeas, tomatoes, olives, red onion.

    Ooh, I have a TON of basil this year and am looking for great ways to use it. This sounds like an excellent take-to-work lunch or snack.

    I made this and it was AWESOME. I will definitely make this again. I had never had fresh basil before, and WHAT A DIFFERENCE!

    This recipe was AMAZING! I made it this week and not only did I love it, but so did my husband and my 2 year old! This was totally a hit in our house-although I like the idea of adding red onion to it and think I will try that next time.
    A note for those making this-the basil in mine sort of wilted when it was stored overnight. It still tasted delicious, but I think next time I will keep the basil separate until ready to eat. But even with the wilted basil it was delish!

    Delicious!!! Went easy on the garlic….just my preference…..not sure this will last long its so yummy!

    I love the look of this salad. My girls both love tomatoes & garbanzo beans! I’m planning on taking this to our 4th of July celebration so that there will be something besides Red Vines that they’ll eat with the BBQ. :)

    OMG! This was so good! We had it for dinner tonight, it is all we had. I didn’t have the exact same ingredients on hand, so I used tarragon vinegar and garlic flavored wine vinegar. I also added sliced black olives and feta cheese. You have to try it!
