Chickpea and Tomato Salad with Fresh Basil

Sorry for my short hiatus… AGAIN. I’m still adjusting to baby and trying to figure out a schedule now that Little Guy is home. Posting should become a bit more consistent now and I (we) even recorded a video today! I should have it ready tomorrow. Thanks for being patient with me as I find my groove again.

Anyway, enough “business.” I can’t wait to tell you about this AWESOME salad I made today. It was so easy and SO tasty!! I’m becoming addicted to fresh herbs. I cannot believe how much fun they are to use! Chickpea and Tomato Salad with Fresh Basil

Today I plucked from my basil plant and made this bean salad really quick. It was amazingly flavorful and filling!

  • 1 can chickpeas, drained and rinsed
  • About 1 pint grape tomatoes, halved
  • 25 large basil leaves, chopped
  • 3 cloves of garlic, minced
  • 1 tbsp red wine vinegar
  • 1 tbsp apple cider vinegar
  • 2 tsp olive oil
  • 1/2 tbsp honey (10g)
  • pinch of salt

Toss all ingredients together and chill for at least 20 minutes, allowing all the flavors to merge.

Then EAT!

Can’t get any simpler than that. :)

    I just made this, and it is so good, without even sitting in the fridge. Once that happens and the flavors mix, I can see this being AMAZING.
    I added red pepper flakes and some balsamic, since I didn’t have apple vinegar. Both of those things were great!
    Also, I adde some shaved parmasean, because if there is salad involved, I need cheese.

    I will say my recipe came out to 317 calories, so not sure how you got the 245, but no worries!

    Susan – Glad you liked it! Just curious, did you drain and weigh the chickpeas to calculate? The weight listed on the can included the liquid as well as the beans. That may be why my calculations are coming in a little lower.

      Hi Dani – I make it the day before ALL the time. As for the vinegar I’d use your favorite. I’d go Balsamic. :)

    I saw this on Pinterest and had to make it. I left out the honey and vinegar BUT I added goat cheese and fresh mint. I ate the entire bowl…

    It’s safe to say that I’ll be making this again.

    I’m making this to take to a BBQ tomorrow and I plan to replace both vinegars with balsamic and add some mozzarella so that its like caprese. I saw someones comment that they added cucumber so I think I might do that too. I’m already droing just thinking about it!

    I made this last night and it was a GREAT lunch today! I used the basil-in-a-tube cause my store never seems to have fresh basil in stock and got a little heavy handed with the garlic but it was delicious none-the-less! I like the suggestion of adding a little cuke to the salad, gonna try that next time.
