One Pot Butter Beans with Brown Rice and Optional Cumin Dusted Pork Chops

Give me a stocked pantry and a large deep skillet and I can happily whip something up for dinner every night. There’s only one problem.

I’m the only one who will like it.

The husband is just NOT a fan of one pot meals. He doesn’t like everything all mixed up. As for the Little Guy the jury is still out. Sometimes he’s game and other times he turns his nose up.

Last night he was game.

I made this for dinner. No one asked what we were having so I didn’t bother bringing it up. To my surprise BOTH husband AND child just started eating.

No funny faces.
No eye rolling.
No prying questions.

I was shocked!

The husband devoured TWO pork chops but just picked at the rice and beans. Typical. The Little guys ate EVERYTHING. Every single thing without question of complaint.

Either I hit the mommy lottery or my approach to feeding a toddler and my persistence with exposing and making him try different things is paying off. Hopefully it’s the latter. One Pot Butter Beans with Brown Rice and Optional Cumin Dusted Pork Chops

Here’s What I did…

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp ground cumin
  • 1/4 tsp Kosher Salt
  • 4 thin sliced pork chops
  • 1 tbsp olive oil
  • 1/2 large sweet onion finely chopped
  • 1 large green bell pepper chopped
  • 1 can Butter Beans drained and rinsed
  • 1 8oz can of tomato sauce
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1/2 tbsp molasses
  • 2 cups cooked brown rice

Mix 1 tsp garlic powder, 1 tsp onion powder, 2 tsp ground cumin and the Kosher Salt in a small bowl. Sprinkle on one side of the chops leaving 1/2 of the spice mixture.

Heat a large skillet over medium heat and spray with non-stick cooking spray.

Brown the pork chops spices side down, then sprinkle on the remaining spices.

Cook for 2-3 minute based on thickness. You should start to see the edges cooking like this before flipping.

Flip and cook for another 2-3 minutes then remove from the skillet and set aside.

Add the olive oil and chopped onion. Don’t worry about any of those brown bits from the pork. You want them in there for flavor!

Once the onion is brown add the peppers, butter beans, tomato sauce and a 1/2 tomato sauce can of water.

Let me pause here to show you butter beans as I learned from posting Not Your Grandma’s Chocolate Chip Cookies these aren’t as popular as I thought they were.

Butter beans are just large lima beans. They are have a fabulous creamy texture and make great finger foods fo toddlers. ;)

Anyway, back to the recipe at hand.

Add the cumin, garlic powder and molasses to the skillet.

Bring to a boil and then add the rice. I keep the instant stuff on hand for things like this but you can use whatever you like.

Mix it all together and you get this glorious vegetarian dish.

That would work for me but it’s not going to fly with the husband so I add the cooked pork back in.

A yummy compromise in my opinion! :)

    When I read your comments about “The Husband”, I just laugh. My husband is like yours, and I am like you when it comes to eating. He and I are oil and water when it comes to food. We just don’t mix! BTW, your dish sounds great. My husband doesn’t eat beans. My twins however, do. Things I think they would eat, they don’t. You have done a great job with Ryan and his eating adventures. Congrats!

    you know how they put brown sugar in baked beans… well this is my way of getting that deep slightly sweetness to the “sauce” the smallest amount of molasses does wonders to deepen the flavor and add a touch of sweetness.

    oh.. and I’m on the new header. ;)

    Aldi Butterbeans!!! I love butterbeans. I sometimes drain them and eat them with a little red wine vinegar, garlic powder, salt and pepper for lunch. I know I will like this recipe cause I love everything in it! Good one!

    last night my dinner was a can of black beans, some fresh herbs from the garden, 1/2 chopped green pepper, some chopped red onion, olive oil and spices…served over brown rice…delicious!!! Yours sounds great too!! I love beans and love how that keep you satisfied…
