Pineapple Poppy Seed Dressing

A few days ago the husband and I celebrated our 10th wedding anniversary. Well, we didn’t really do much to CELEBRATE. It’s kind of tough with a newborn but we had fun all the same.

We did do gifts and the husband sent me an Edible Arrangement. I LOVE these things! So much better than flowers in my opinion. They are gorgeous and tasty. Plus who doesn’t like chocolate covered strawberries and heart shaped pineapples?

Pineapple Poppyseed Dressing - the heart pineapple

The fresh pineapple in the house gave me and idea. I had a craving for a salad and ever since I made The You-Don’t-Need-to-go-out-for-a-Great-Salad Salad, I’m all into adding fruit. Then it hit me, why not use the fruit to make the dressing? Pineapple Poppyseed Dressing

Pineapple Poppyseed Dressing was born.

It came out sweet, creamy and thick. Dressing the salad beautifully!

Here’s what I did.

  • 1/2 cup pineapple (83g)
  • 1 tbsp apple cider vinegar
  • 1 tsp olive oil
  • 1 tsp honey mustard (5g)
  • 1 tsp honey (or more to taste depending on how ripe your pineapple is) (7g)
  • pinch of salt
  • 1 tsp poppy seeds (3g)

Put all ingredients except for the poppy seeds in a blender. I used my Magic Bullet.

Blend until smooth.

Add the poppy seeds.

Mix well.

Top your salad!

I used the whole batch but you could get two servings out of it. I’ll list it as one serving and you can decide.

    Sounds good Roni-I have all the ingredients minus the poppy seeds but I am sure it will be great even w/o them! :) Congrats on 10 years! My hubby and I will be married 6 years this October! :)

    This looks awesome! I’ve never made my own salad dressing, but this might inspire me to try! But…
    What in part of the grocery store do you find poppy seeds?

    Happy Anniversary! I love pineapple, and cannot wait to try this dressing. I think it would taste great on a salad with some diced chicken and craisins.

    @HeyBeckyJ – you can find the poppy seeds at the grocery store on the baking aisle by the rest of the spices.

    Sherry – I echo Lynn. You can find poppy seeds with all the spices in the baking aisle of the grocery store.

    Congrats on your anniversary!
    How much does this make?
    Is having a Magic Bullet worth it? I already have so many appliances. Is your bullet in addition to a food processor? This dressing sounds really good, thanks for the recipe.

    I just made this and it was awesome! I left out the oil and didn’t miss it at all. A bit less poppyseeds too. I came up with 13 calories per tablespoon. Nice. Thanks!

    I use this online program called E-Mealz that has a points type plan. This weekend I was shopping with my list and it called for a raspberry vinaigrette for a spinach blueberry salad. I thought about this and decided to make this instead of buying a new bottle of dressing. It turned out great! The only differences were I didn’t need the honey and I used Dijon mustard instead of honey mustard. Delicious as usual Roni, thanks!
