Lemonade Ice

I had one of those days today. You know the kind that start with a flat tire and end at a fast food restaurant. ugh. By the end of the day I wanted something. Something refreshing. Something tasty. Something I would feel good about eating after having just a wee too much chocolate shake after dinner. :)

I should add I wasn’t hungry, just looking for something to snack on. Honestly, I think I was more thirsty then hungry but plain old water wasn’t going to cut it. Did you ever have one of those days?Lemonade Ice

  • 1 lemon (peel and juice)
  • 3 packets sweetener (I used truvia)
  • 1/2 cup non-fat plain yogurt (114g)
  • about 8-10 ice cubes.

In the blender (I used my bullet) add the yogurt, sweetener, peel of one lemon, lemon juice and ice. Blend for at least 2 minutes until an icee consistency forms. Stopping and adding another cube or two may help.

I poured mine in a coffee mug, topped with some of the saved peel and ate with a spoon. It was exactly what I needed tonight.

    Ugh! Sorry that you had a bad day. But bad or good, that’s the perfect way to end the day. I love the lemon zest sprinkled on top – nice touch. And good for you that you came home and made this. If that were me, I might not have been so tough and would have reached for the Ben & Jerry’s!

    just made this…i have one of those upside down blenders like the bullet too..i’m soo mad when i opened it i spilled it everywhere..i managed to salvage some and it was soo delicious..i’m so sad it spilled..
    i used honey instead and it added a nice floral flavor =)

    How come it is 2 points? My fat free yogurt is 60 cal for 1/2 cup. Just wondering what gives it that extra point. Sounds so yummy.

    Carrie – I base points on total nutritional info so with the lemon it’s bumps up the cals to 80 making it 2 points. You could count it as 1 as lemons are free. It’s a matter if Weight Watcher point preference. :)
