Banana Oatmeal Cups with Chocolate Chips

I’m shocked at how good these came out. SHOCKED. I totally made them on a whim this morning while rummaging through my kitchen looking for something to eat at breakfast. I had a gross of bananas just about turning overripe, oatmeal and 2 eggs. That was really it and nothing sounds good.

Then I remembered the Berry Oatmeal Cups and asked the toddler if he wanted to make muffins. Of course he said "Yes!" And so did Irish. :) Notice someone is getting camera shy.

So we (toddler and I) really did LOVE these. I didn’t even bother asking the husband. He doesn’t even like "regular" muffins and I’m not even sure he’s ever even eaten oatmeal. His reaction would have been the standard, "I don’t like it but I can see why others would." And I just didn’t want to deal this morning. As I say… more for us! Banana Oatmeal Cups with Chocolate Chips

  • 3 mashed bananas (the more ripe the better!)
  • 1 cup vanilla Almond milk (you could use skim but you may want to add a little sweetener)
  • 2 eggs
  • 1 tbsp Baking powder
  • 3 cups (240g) Old Fashion or Rolled Oats
  • 1 tsp vanilla extract
  • 3 tbsp (42g) mini chocolate chips

Preheat oven to 375 degrees

Mix all ingredients except the chocolate chips together, and let sit while you prepare the muffin pans.

Spray a muffin pan and/or liners with with non-stick spray.

Stir the chocolate chips into the oatmeal batter.

Divide batter into 15 muffin cups. They should be just about filled.

Bake 20-30 minutes, you’ll see the edges just starting to brown and they will be firm to the touch.

The muffins may stick when hot but are removed easily when cooled for a bit.

    I think your ww points calculation is a little off.. I was kind of suprised when i looked because i usually dont look at the cal/fat/fiber and i was like no way lol =]

    These lookk great! I have a question about the nutrition info. I have some quaker old fashioned oats and the carb count for 1/2 cup is 27g. This would come out to almost 11 carbs per muffin just for the oats. Can you pass waht oats you uesd if they are not Quaker? I have to watch my carbs per doctor’s orders and would love to try these. With the nutriton info that you posted they would be great, but I wanted to double check before I made them.

    Lee – I’m sorry. It’s ANOTHER typo. I put the sugar where the carbs were suppose go. Serves me right for posting the recipe after midnight!

    Just so you know all oats pretty much have the same carb counts. Regardless of brand. Sorry. :(

    i am going to try this as soon as my bananas are ripe enough. every morning i have oatmeal (made with soy) and a banana for breakfast. i eat oatmeal every day because it really boosts my milk supply (i nurse my five month old baby boy). these muffins will make it easy to get breakfast more quickly than making the oatmeal. plus i can eat them in the car. the only thing the recipe is missing is nuts… i wonder if i could throw in some sliced almonds or walnuts and re-evaluate the points?

    These were to die for…I put them in an 8X8 pan because I was too lazy drag out the muffin tin, and I cut them into 9 squares. YUM!!

    I am out of chocolate chips so I followed the link for the Berry oatmeal cups. My toddler and I made them for snack time today with blueberries and she had 1 and asked for more! I like them too! My husband tried one but with neither positive or negative comment. Will have to see what my 7 year old thinks. I am thinking a great warm weather oatmeal alternative! I must buy chocolate chips. Let us know if you try them with applesauce instead of bananas. I may have to experiment with it myself. Thanks for the ideas!

    Oh, what fun! I can’t believe there’s no flour in these! I substituted the 2 eggs for egg beaters. After the muffins cooled, I dipped each muffin in a glaze to jazz up the flavor! The glaze is a half cup powdered sugar, 1/4 tsp. ground ginger, 1/4 tsp. vanilla, 3 tsp. warm water or more if needed. I’m guessing they’re still 2 points each with the changes! YUM!

    OMG – these turned out fantastic. I added a 1/2 cup splenda brown sugar because I use unsweetened Vanilla Almond Breeze. I was skeptical because I live at 8000 ft. and I always have to adjust recipes, but I just decided to go with it. I mixed everything but the chips and baking powder and let the mixture sit for an hour or so to let the oats soften first. My granddaughters loved them and I will make them again.

    I made these this morning and they are great! Even my picky boyfriend loved them. I though he would back off because of the texture the oatmeal gives to these muffins, but to my surprise he loved it! He even asked me to make them regularly for breakfast on weekdays. It’s so easy to make, with ingredients I always have on hand, so I can easily see myself making this recipe each time I have black bananas or no idea what to make for breakfast.

    I used skim milk and 2 small spoonfuls honey instead of the almond milk. I mashed my bananas only a bit to leave some banana chunks and I added a bit more chocolate chips. Yummy!

    I used 4 small bananas, skim milk and Splenda and these were fabulous, but I also wanted to make a suggestion. Every oatmeal cup batch I make now has cinnamon and also ground flax seeds! I know I have seen you use flax seeds before so I thought you may want to try it too! I just shake some in from the pacakage I keep in the fridge but it is probably somewhere between 2 Tb-1/4 cup. I am slowly increasing the amount but as it increases I may need to add a bit more liquid. I don’t eat fish so I try to include flax seeds in as many ways as possible.

    Nicole – I had the same idea!

    I made this recipe twice now, and yesterday I made it a third time but completely different! I didn’t have any bananas left so I used applesauce and chopped apples instead, with some cinnamon, and raisins instead of chocolate. I added 1/4 cup flax seeds I crushed with my magic bullet. I’m new to flax seeds and I’m slowly trying to incorporate them in my food, up to now I only use them in my morning cereal and in baked goods. It turned out quite good, but chocolate and bananas are more of a treat than apples and raisins :)

    This recipe is the bomb! I tweaked it a bit–I use skim milk, add 1/3 c sugar & 1 tsp salt & 1 T cinnamon, & bumped up the mini chocolate chips to 1/2 cup. I use an 8×8 glass pan & bake for 30-35 minutes, which is quicker for me than muffin tins. My additions obviously bring the health factor down a notch, but it’s still pretty healthy stuff and absolutely yummy. I cut it into bars & freeze, and have them fresh & ready whenever I want one.     I have been “stalking” your site for awhile now (go ahead laugh) and I have made a few of your recipes for myself and loved them all so I thought I would finally jump on the bandwagon and start posting. :D Yay!

    So I made the muffins sans one banana because thats all I had. Anyway they have 5 minutes to go and the kitchen smells like its getting some sweet chocolate lovin. I’m dying. You need a “Warning. Smells of chocolate will invade your kitchen like you wouldn’t believe.” on the recipie. No joke.
    I did use more chocolate than you said so that may be part of it lol.

    I tried these with pumkin as Terri questioned. They were really good. I used a can of pumpkin(instead of banana), left out the egg, used 4 packets of Truvia( the pumpkin need more sweetener than the bananas) and a shake of cinnamon. The rest is the same as your recipe.
    What an awesome recipe…you can do so much with it!!

    Finally got around to making these this weekend and they are DELISH. I made a few modifications based on what I had on hand (what isn’t listed was the same as your recipe):
    - 1/2 cup natural applesauce and two bananas
    - 1 egg & 1/4 cup egg whites
    - 8th continent light vanilla soy milk
    - a packet of Stevia
    - 2 cups multigrain oats & 1 cup quick cooking oats (not instant, but the “quick” kind in the container)

    They came out AWESOME! With a little PB2 they are great fuel for a workout. Thanks as always, for the inspiration.

    I made these for the kids the other day. They were surprisingly very good, considering they are flourless. I liked them even better cold from the fridge the next morning. For someone is who trying to reduce their cholesterol, these make a healthy breakfast or snack. Thanks for the recipe. I’ll be making these again soon and trying the raisins next time.

    Oh, wanted to add that I used one cup of oat bran, and instant high fiber oatmeal packets for the remaining two cups.

    These were so good! Ooops too good – I ate 5 today ROFL. Nearly all core ingredients too!

    I’ve tried many baked oatmeals but none were as simple as this. None taste as good as this either!

    BTW these are really yummy with some chocolate peanut butter on them (maraNatha dark chocolate peanut butter). Same points as regular peanut butter FYI

    These looked so yummy-but I didn’t have enough bananas or any chocolate chips in the house…
    So I made them, only I added a scoop of vanilla protein powder and a couple tablespoons of ground flax. Instead of the other two bananas I put blueberries.

    For two of the muffins I put in some dried chives, 1 diced mini babybel light cheese and 2 tsp real bacon bits. The third muffin I put in 7g half peanut butter chips half semi-sweet choc chips. The entire thing for around 200 cal. I was so satisfied! This will be a new fave when I need a good light but filling snack or small meal. Thanks Roni!! I get so many ideas from you! And I relate to so many of your experiences and struggles with weight, sometimes I feel like I’m reading about me. Your site has been one of the things that has helped me lose almost 30lbs!!

    I tried mine with instant oatmeal, skim milk and sweetener along with the other ingredients. After baking for 30 minutes, the interior still looked undercooked (a bit gooey inside). It tasted really good though! Love them! Are they supposed to be a little gooey inside?

    That’s probably because you used instant. Rolled/Old fashioned will hold up a little better. But gooey is good, no? ;)

    I made thes today for breakfast, didn’t have almond milk or chocolate chips so I substituted with 1% milk and added a 1/2 cup of lite brown sugar for some sweetness,they were deliscious.

    Made these for the first time today. I didn’t have the Almond Milk, so I used skim. I was unsure of how much sweetener to add & didn’t want to do too much, so I only added 1 Tbsp of Splenda to a half recipe. They definitely need a little more sweetness. They do have a different consistency to them, but will be making them again and adding more Splenda next time.

    I just whipped up a batch and am (im)patiently waiting for them to cool. (In a nutshell, I ate a muffin out of the oven once and didn’t taste anything for two days. Not. Cool.) Sort of pulling a blank on this one, but how would you recommend storing these baked goods of awesome?

    I always make a double batch and in the warmer weather I keep some in the fridge and I freeze the rest,when defrosted they taste just as fresh.

    Had all ingredients on hand so made the other day. Here’s my take… 3 cups of oats normally needs 6 cups of liquid when making oatmeal. This recipe uses 1 cup of liquid. That leaves the oats wanting up to 5 more cups of liquid, which gives you an idea of how heavy these are in the stomach. I made mini-muffin size and they sit like bowling balls – my daughter and I both had a tummy ache after eating just two. Drink a ton of water with them and you should be fine.
    Next time I would vitamix the oats into an oat flour first and I would use less oats and/or more liquid. The whole oat is too chewy and heavy.
    It was a fun experiment though and it’ll spur me on to trying some other out of the box recipes. : )

    I also found them to be a little too dense and chewy. Would using instant oatmeal help? What does “vitamix the oats” mean?

    I can only experiment on Sundays …. my 1 year old may be 18 by the time I figure it out by myself :)

    Any ideas?

    Toni – They are going to be dense and chewy they are 90% oatmeal. As for “Vitamix” that just mean they were going to blend the oats first. Pretty much turning them into a flour. I’m jut sure how that would work as it reduce the volume even more. In my opinion making them even more dense.

    The idea here isn’t to make a cupcake out it. Its portable oatmeal that you can hold. Like a chewy granola bar without the crunchy bits.

    Thank you soooooo much, these muffins are amazing! Healthy and delicious! I made them for my 4 year old son and he loves them,his favorite is sliced with some organic peanut butter. Have a Happy Day :)

    If you do not put the chocolate chips in, do you know what the calorie count per muffin is then? Also, does it change the recipe any? They look soooo good :)

    It actually doesn’t reduce the cals that much, maybe 20 a muffin but I can’t calculated. However they add a much needed flavor. The muffins aren’t very sweet so the little chocolate you get makes it perfect. Just my opinion.     I found this through Pinterest and it looks really yummy for my GFCF son (too high in carbs for me!) and I could use his allergen free chocolate chips in it as well. I love trying new healthy things! Thanks for sharing!

    Oh my – I just found this on Pinterest and I must tell you that they look just like my favorite banana oatmeal chocolate chip (and/or nut, raisin, etc. . .) cookie from childhood. In fact, I tell my mom that’s all I need for my birthday now! :)

    And I was just wondering YESTERDAY how to convert them into a breakfast muffin. Guess what I’m doing this week??? (Just need to get the bananas ripened!)

    Yes, this is much more of a portion-sized baked oatmeal recipe than a straight-up muffin. Tried the recipe today, (only substitution was milk and honey for the Almond Milk) and it came out with a pretty decent taste, but the texture was a bit eggy to me. Any suggestions?

    Oh they aren’t muffins, they are “oatmeal cups” At least that’s what I call them. Not sure how else to describe them.

    As for the egg you may want to try whisking the eggs with the bananan until nice and frothy. This may help distribute them more.

    Made these this morning, doubled the recipe so I had a mini muffin pan, regular muffins, and a bar pan full! I used skim milk because that’s what had! My kids gobbled these up and so did I!!! Yumm yumm! Thanks for the recipe!!!

    I just made these this morning.. I’m eating it right now as I type. I am IN LOVE with this recipe!! I’m trying not to eat a lot of sugar, so instead of chocolate chips, I chopped up a few squares of an 85% cocoa chocolate bar. I also added frozen raspberries. SO GOOD!! Next time I think I’ll add sliced almonds as well! Yumm.

    I’m in shock!! My picky 5 and 2 yr old actually liked them!! Thank you so much for the recipe! I didn’t have bananas (my kids eat them too fast) so I used 1 cup of applesauce instead. I also added 1/2 tsp salt and 2 tsp of cinnamon and they came out fabulous. I have been trying different healthy muffin recipes that have been “booed” by my kids (even though I thought they were all pretty good). Anyway, they asked for seconds this morning! A pretty glorious morning for this mama….lol!

    I am some what baking-challenged, however these were so easy! They were so delicious, and have now become our on-the-go breakfast staple.
    I substituted walnuts for the chocolate chips in my latest batch. Not nearly as big of a hit with my boyfriend…

    Just saw this on Pinterest this morning and decided that since I have most of the ingredients I would wing it!… Instead of chocolate chips I added fresh blueberries and a few shakes of cinnamon. They are still in the oven, but from the reviews I’ve read I’m sure they will be amazing!
