Poor Man’s Egg “Salad” Sandwich

When I was a kid I had some quirks, I guess we all do. One of my moms favorite stories about me and my stubbornness is refusing to eat ice cream if it wasn’t chocolate. She just told the story (again) at Labor Day! LOL I also loved cheese, but hated it melted and for some reason would always ask for my peanut butter and jellies with no jelly, I thought it was gross. I also liked hard-boiled eggs but not egg salad? For some reason smooshing it up and throwing it on a slice of bread did NOT appeal to me at all. Maybe cause I really didn’t like the yolk or Mayonnaise. Then again, maybe it’s because it just looks GROSS!

So I have a lot of memories of my mom making me sliced egg sandwiches. She’d use just enough mayo to glisten the bread, slice the egg and viola! I LOVED these, especially on soft fresh bread with a sprinkle of salt and pepper. So simple and so YUMMY!

Simple egg saladNow, of course, I eat ALL kinds of ice cream, love grilled cheese and really can’t live without my low sugar strawberry jelly. But the thought of egg salad still gives me the heeby jeebies. I think because it has SO much mayo in it and I’m just not a fan. So today I made my “poor mans” egg salad sandwich and it was EXACLY how I remembered them. I think this is going to become a new staple lunch for me.

  • light whole wheat bread or a whole wheat bun (I used a Whole Wheat Potato Roll)
  • 1 hard boiled egg sliced
  • about 1 tsp light mayo
  • Salt & Pepper to taste

Smear the mayo on the bread or roll (you could use a bit more). Arrange egg slices, sprinkle with salt & pepper. ENJOY! I added some carrots and pepper strips on the side.

    i think u read my mind…..i was looking for a simple lunch idea..and you hit the nail on the head with this one…this looks awesome..simple but i know it will be yummy!

    great simple idea! i actually like egg salad but rarely eat it because i don’t want to go through the “hassle” of making it. this is much simpler and sounds yummy too!

    Hey Roni – how did you work out the points for this? It says 2 points for 1 sandwich, but the egg alone is 2 points right? Then if it’s a roll, another 2 points and the tspn of light mayo another point. Total of 5 points…please correct me if I’m wrong. I did the points in Australia as well as in America and an egg there is only 1 point! So I wonder if they count the points a bit differently here. Thanks and please help me figure this one out!

    Kelley – Thanks for catching it!! I accidently left the info from my Okra stew!! LOL Sorry, all corrected now. 1 tsp of light mayo is not a point so it’s only 4.

    You could use light Miracle Whip rather than plain mayo and add some lettuce to make it exactly the way I have always loved it!!! Yummy!

    LibbyLee – OK, that’s unfair!! LOL I still base the points on total nutrition values anyway. I wonder if eggs are smaller down under?!?

    I tried this for dinner tonight … Surprisingly, I was full (I tend to have a mental block about eating “just a sandwich” for dinner). Of course, I did use a larger whole wheat roll and two eggs, for a total of 7 Points, but it was still very good.

    I have no idea why the points are slightly different. but I also only got 18 points down there where as here I get 21…so I think some things might be calculated slightly differently (kilojules instead of calories maybe?) But I must admit – I think I enjoyed it more when it was only 1 point :)

    My favorite thing on the cheap…

    1/4 cup of egg beaters (microwave for 1 min)
    2 slices of light wheat bread (toasted)
    1 T. carb ketchup

    I figure this at 2 points…I love eggs with lots of ketchup!!! I think it may be a PA thing though ;)

    Sounds delish! Poached egg sandwiches are also delish. I loooove a nice poached egg, with a sprinkle of cracked black pepper and a few shavings of grana (or parmesan or any hard cheese) on it for a salty bite. Best eaten on a crusty whole wheat roll, sometimes with a little raw spinach or arugula…yummy!

    I love this sandwich. Try it with the egg still hot from being boiled, with just a smidgen of light cheese, some thinly sliced tomatoes and some rocket leaves – this is a BIG sandwich which looks amazing. I have it for supper as its too big for a lunch!

    Hi Romi, this looks SO awesome. I have a question regarding the servings. It says 4 servings, but it’s one sandwich. So, do you only eat 1/4 of the sandwich? I guess my question is why does it say “4 servings”.
