Quick Kabobs

When I’m stumped on what to make for dinner and I want to grill I gravitate towards kabobs. They’re fun, cook up fast and are very easy to load up with veggies for a light meal!

I had NO idea what to call this particular concoction except ‘quick’. I literally pulled the some frozen chicken out of the freezer, popped it in the microwave to defrost while I cut and cleaned the veggies. Then I whipped up the marinade, which I really can’t call a marinade as I only coated the chicken and veggies with it about 5 minutes before cooking! But it worked! Both the husband and the toddler enjoyed them. The only thing that didn’t go over too well was the tomatoes, so ate all of those! :~PQuick Kabobs

  • 8oz boneless skinless chicken breast cut into small chunks
  • 2 small-medium green peppers cut into chunks
  • 1 cup pineapple cut into chunks
  • 1 pint cherry tomatoes
  • 1 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • black pepper

Put the chicken, peppers, pineapple and tomatoes in large bowl, preferably with a lid for shaking!

Add the vinegar, soy sauce, and spices to the bowl and mix (or shake).

Skewer in a fun pattern like the toddler here (of course after playing drums) and grill over medium high heat for about 8 minutes turning to prevent burning. Makes 9 kabobs.

    Roni–

    This recipe looks great! I love kabobs but hate waiting for my charcol grill to warm up.

    My new go-to dinner idea when I all I have is chicken and veggies is fajitas! When I was cooking them I kept thinking of you becauase they were so easy to cook and so healthy–something you both include in all your cooking. It really is the simpliest recipe every–cook slices of chicken breast (liberaly covered in fajita seasoning) and then add in sliced pepper and onions. Cook till tender and then eat in a tortilla with FF sourcream and FF cheese for a quick and healty meal.

    Can I put these in the oven? I live in a second floor apartment and dont have a grill. I have a table to electric grill-should I try that? I long for the day when I will have a yard and will have a grill :(

    I made the kabobs in a skillet-I just didnt kabob them-you know put them on the stick it was still really delicious.
