Egg Tomato Pizza

I have 2 confessions about this idea. Ya ready?

1. It was inspired by a certain someone who recently launched her first cookbook

and

2. I don’t like cheese on eggs.

How can I not like cheese on eggs. Seriously? I like cheese and I like eggs but together they give me the willies. Weird, I know.

That being said, this was good! I was a bit shocked. I still prefer my eggs with no cheese but this was a fun way to start the day and a great way to use the fresh basil from my new garden!! Egg Pizza

Heat a small non-stick skillet over medium low heat. Spray with non-stick cooking spray.

Beat the egg and egg white together. pour in the pan and let sit for a few minutes until set. They key is low heat, we don’t want to have to flip it.

Once you can jiggle the pan and only have the top shake a bit, lay the tomato slices on top. Sprinkle with a bit of salt and pepper. Top with the cheese and basil leaves. Cover.

Cook for about 1-2 minutes until cheese melts. Serve!

the toddler with eggsUpdate: kyree asked a great question in the comments and I totally forgot I was going to address this with this picture. When I make eggs with the toddler we always use 3, I get 1 egg and 1 egg white and he get’s 1 egg and 1 egg yolk. He’s still young enough that the extra fat and nutrients are beneficial for him and it’s an easy way to get more vitamins. I once heard that an egg yolk is natures multivitamin.

I snapped the picture after taking mine (I know they aren’t the best this time) and the toddler felt left out. He said "take a picture of MY eggs" so that’s what I did. and it couldn’t have come out cuter. For more on how we make eggs in the morning check out Mommy and Me Omelets.

    P.S. What do you do with your extra egg yolk?

    Hey Roni, I totally agree with you with the egg and cheese thing. My whole life, until stumbling on your site, I thought I hated omelets. I LOVE THEM! I just hate melted cheese and egg together. UGGHH!! way to slimy, or something. Im glad I am not the only one out there!

    Hi Roni! Just briefly wanted to say that your site is great. I like the look of lots of the recipes and will get around to trying them.

    A question, though. Why do you use paper plates? It just bugs me — there must be a lot of waste from that. And you have those pretty black ones you could be using!

    Convenience. I also reuse my water bottles for convenience, bring my own grocery bags to the store for convenience and try to make changes where it makes sense for me and my family. I haven’t been able to give up my paper plate habit yet but I will. Living greener is a process just like everything else.

    This sounds SO good! I’m going to try this soon. It’s like a more exciting version of a frittata cuz it feels like something you’re not supposed to eat for breakfast!

    I think it’s a working mom addiction. I mean seriously, I just don’t have time to wash dishes ALL day. I cook most meals so it adds up quickly! But I also recognize it’s not the best choice. If it makes it any better, I have the same pack of 100 for like a month! lol We don’t use them at dinner. Normally snacks, breakfast eggs and cooking help.

    I’ve actually heard that sometimes the overall harm from using paper plates is LESS than dishwasher, because you don’t use energy and water. The physical waste of paper might be “worse” for the environment, but resource and carbon-wise, paper plates are probably better. Just my 2 cents.
