Quick Tortilla Pizza - Video Post

Inspired by Baby Carrot’s comment on my Stupendous Stromboli post, I decided to make a tortilla pizza today.

Just when I thought I was out of video ideas! ;~P

This really is an old favorite of mine. Whenever I have a pizza craving this or English Muffin Tomato Pizza really hits the spot. Quick Tortilla Pizza

Preheat oven to 425 degrees.

Pierce the tortilla with a knife a few times and bake for about 2 minutes until crispier.

Smear the tomato paste on the tortilla. Sprinkle with spices, add pepperoni and any other toppings, top with cheese.

Bake for about 5 minutes.

Nutritional information will depend on the tortilla you use. Approximate nutritional information based on the brand I used.

    I LOVE your videos! I totally feel like I know you now and it’s just so cool. I hope that you get your own show one day, that would be so awesome! I actually just watched the tortilla pizza and quesadilla one and I hear the crunch and now I can’t wait to try the pot of water trick! Thank you for sharing these with us, it really helps to actually SEE how quick and easy these recipes are!

    Hi Roni, I make your pizzas all the time! My whole family loves them. But I have a question. Where did you get the cool pepper thingy. (I am not sure what to call it) I guess an electric peper mill? Anyway that is so cool. I have to get one. I have the kind that you have to turn by hand.

    is it really 14g of fibre?? ww wholewheat tortilla’s only have four maybe i need to look for a different kind?

    Barb - I actually got it as a gift. I LOVE it! I put tri-color pepper corns in there and never have a meal without it. I put a similar one in the GLB store for you under Kitchen Gadgets - http://greenlitebites.com/the-glb-store/

    Suzanne - No I messed up I was thinking of the La Tortilla factory ones, they have 14 I think. The store brand I use has 6. I changed it. Thanks!

    I also really love your video posts. I have seen your idea for tortilla pizza before but never really considered making it until I saw how yummy it looked on video.
    Oh yeah my kids watched your fritatta video twice just to watch the toddler. We loved that.

    Roni-

    OK, just when I thought I was making my pizza just right……I watched your video and got the idea for the sliced pepperoni. So simple but so right! Those darn pepperonis come off in a hunk when you bite into one. Thanks for the great tip. Keep your videos coming, they’re awesome! As for the tortillas, I used the La Tortilla Factory last night and they were a little “tougher” once baked. Maybe I’ll go back to the other kind? Thanks again!!!!

    Just wondering what your thoughts on Tofu are? Haven’t had much success with my (very few) attempts, but thought I’d ask you since you seem brave and have lots of great ideas!!

    Wow–it seems like such a simple recipe, but oh my, how tasty. I was thinking, how could it be that amazing–just some easy, simple ingredients; but boy was it great–I thank you for the tomato paste idea–I think it makes it! Do you use the crockpot at all? Any crockpot recipes coming?

    I tried this tonight on the preschooler - he loved helping to make the pizza, something we’ve done with the more traditional style! My only problem - my tortillas didn’t come out very crispy, only around the edges. They were from the refrigerator section and I had them stored there as well - is that what the problem was?

    Other than that, 4 thumbs up from our house!

    I just made this today with some minor alterations and OMG it is SOOOOOO YUMMY and fast to make. Thank you for doing the videos, it really helps show just how fast a healthy meal or snack can be made.

    These are fantastic…my hubby and toddler loved them. I love that they are fast and can be very low cal if necessary at the end of the day.
