Turkey Stromboli

I could eat this kind of meal every day. The leftovers were immediately wrapped and placed in the freezer to stop me from eating more then one. ;~) The video is long as I make them from start to finish but don't worry you I've posted the recipe below.

Here's the recipe!

Ingredients

  • ½ sweet onion
  • 2-3 cloves of garlic
  • ½ lbs lean ground turkey (8oz)
  • 1 bell pepper chopped
  • 1 small-medium zucchini chopped
  • kosher salt and pepper
  • 1 8oz can tomato sauce
  • ½ teaspoon dried basil
  • ¼ teaspoon dried oregano
  • 1 package of Whole Wheat Pizza dough
  • 4 oz fancy shredded mozzarella cheese

Instructions

Preheat oven to 425 degrees

Heat a large skillet over medium high heat. Spray with non-stick cooking spray. Brown with ground turkey with the onion and garlic. Add the chopped pepper and zucchini. Sprinkle with salt and pepper. Cook for a few minutes while you prepare to work with the dough.

Sprinkle you counter or cutting board with a bit of whole wheat flour. Separate the dough into 4 equal parts.

Add the tomato sauce, basil and oregano to the skillet. Stir and lower heat to medium-low. Let it simmer while you prepare the dough again.

Roll out the dough into rectangles. Line a cookie sheet with aluminum foil and spray with non-stick cooking spray. Lay one of the rectangles on the cookie sheet. Scoop about 2 ladlefuls of the turkey mixture in the middle. Top with 1 oz of cheese and fold over to create a long skinny stromboli. Place a few slits on the top.

Note: They will be hard to move so making them on the sheet with be a big help.

Once you make all four. Place in the oven for 15 minutes. Once finished let sit for 5 minutes before cutting.

    Hi Sharon! The Trader Joe's dough is 16oz (1 lb) So 4oz a serving. Hope that helps. -Roni

    I don't have a trader Joes's near me. Any idea how much dough this is? I could make it in my bread maker, but I don't want to over do it. (how many ounces is the package of dough?) Thanks!! Have really enjoyed many of your recipes.

    tip for the dough, I used TJ's as well. I found the first pieces i worked with kept shrinking on me and wouldnt stay stretched/rolled out. I did let then rest for the 20 minutes but i noticed as i got to dough 3,4, it got easier, less fighting with it, and dough 5 and 6 rolled out with no hassle at all. So i am concluding next time i will let the dough sit out for an extra 15 minutes or so.

    These are on the menu again so I can test this theory, but if you have dough acting like a rubberband try it.

    I made this tonight! I was going to make pizza but decided this would be more filling. I used frozen peppers from trader joe's (nice to have on hand), a large can of petite diced tomatoes, 1 onion and ground chicken breast (that I have on hand - I buy chix breast on sale and grind up into 1lb baggies using my kitchen aid mixer attachment). I had 10oz of ground chicken. This made a TON of filling so I have a tiny bit extra and had nice large strombolis! I'm thinking of doing ff ricotta if I have it on hand in the future so I don't need to count points for cheese (I do SFT). This was so yummy! I stuck a froz. pizza in the oven for the family b/c dh bought a lot of them and the other 3 strombolis go in the freezer for meeee!

    Thanks for the fabulous dinner idea! I just joined Weight Watchers this past week and your blog has so many fabulous meal ideas. I used sweet italian chicken sausage, sauteed onions and bell peppers mix, and TJ's lite shredded mozzerella cheese. My hubby approved and said it officially makes the dinner rotation list in our household. That's HUGE! Thanks so much!

    Hi Roni,
    we tried these last night and I ended up needing to go to the chiropractor so I couldn't help DH with the dough. He has a really hard time handling Trader Joe's WW pizza dough and I'm wondering if that's the brand you use? Do you have any tips for working the dough or are they in the video?

    We changed up the filling a bit--we used a jar of ratatouille from Trader Joe's as the veggies, and put a Tb or 2 of ricotta and a few sliced of turkey pepperoni inside. Then we made a pan of sauce with canned tomatoes, the rest of the ratatouille, 1-2 turkey italian sausages and onion/garlic/seasoning. That got ladled over the top after baking (we like lots of sauce but didn't want it be soggy). The rest of the sauce will be served over pasta tonight!

    AWESOME! Glad you liked them.

    I use nutritiondata.com. Removing the veggies would lower the calories a bit but nothing big. Next time try the zucchini dices up small. He'll never notice. ;~)

    Hey Roni, I just made this for the husband and I....They were FABULOUS!! I made a couple changes because he will not eat onion or veggies. So mine were sans the good stuff! The TJ dough was great to work with! I have a couple questions if u wouldn't mind answering. First since I didn't add the veggies and only went the spices and turkey route, how much does that change the nutritional info in the way of calories? Also what website do u use to calculate the nutr. info?
    Thank you so much for this recipe, it is one that I know we'll have over and over.

    MMMMM! This looks perfect! I'm doing simply filling technique and think I could work it so I only have to "count" for the dough! I'm thinking I could put fat free ricotta, spinach, tomatoes, onions, zucchini, peppers.

    Now I must get to TJ's! I have been to afraid to freeze their dough but if you can do it, so can I!

    Looks awesome, Roni! I like that it makes four separate servings. If I were to use that dough to make a pizza, you know I'd be eating half of it, but I don't think I'd eat two strombolis. Good thinking!

    I've made similar with Jennie-O turkey hot italian sausage. I added in marinted artichoke hearts too. Yummy goodness!!!!
