
I had fruit, I had chicken, Hmmmmmm... this is what I came up with and honestly, I could not be happier! I loved loved loved it!
Bear with us in the video, it is a bit long as I took a few detours with the toddler. He's seems to be able to help more and more but still gets easily distracted. Ahhhh the joys of toddlerhood!
I've changed the amounts slightly now that I made it once. It could have used a bit more chicken and that helps even the servings to 4.
- 8 oz cooked chicken breast (I used short cuts)
- 1 cup cubed honeydew melon (170g)
- 1 cup cubed mango (165g)
- 1 cup grape tomatoes halved (150g)
- ¼ cup plain non-fat yogurt (57g)
- juice of one lime
- 1 teaspoon dried cilantro
Mix all ingredients together and serve. Goes great on a whole wheat pita!

Wow Roni this was great. I made a few changes and it still turned out perfect. I "forgot" the tomatoes (husband doesn't eat them, I love them) and my mango was just not as ripe as yours (how did you just slice yours in half? That was amazing). And I added strawberries and blueberries. I was a little leery of the plain non-fat yogurt, but I love it all together! I cooked my chicken in lime juice and coriander. It all came together really well and I over made it so I'll be eating it for lunch for a few days and sharing with neighbors! Thanks for the wonderful summer dinner idea!

Thanks for the recipe Roni, YYYYYUUUUMM!!! I wanted to share this I always have any kind of chicken with this drink called purple. You must have heard about it since it's doing a lot of rounds in the celebrity circuit and is all over the news. Its tastes amazing with chicken, try it and let me know if you liked it or not. It is a health drink which is made up of 7 fruits juice and is high on antioxidants and you know about antioxidants right? it prevents premature ageing, what else do growing women want huh, LOL!! BTW - since I believe green is my "comfort color", I am thrilled that you always wear green, and as Lori pointed out, it goes along with your site. Just had to say - love the video, and the toddler makes me laugh every time. It was too cute when he said "don't cut yourself mommy", and I don't know if you noticed, but in the beginning he just randomly sticks his finger in the bowl of honeydew and lets is hang out for a while. (Then sneaks a spoonful when you aren't looking) - kids just crack me up 🙂
