Quick Pepper Pasta - Video Post

A quick video of the toddler and I making lunch today! We were planning on something else (as I say in the video) but had to make due with what we had on hand. The lunch was just for me, the toddler had a sandwich and about 2 whole peppers by the time we were finished. :~)

Quick Pepper Pasta

  • thick slice of onion chopped
  • 2 peppers chopped
  • 2 oz cooked whole wheat pasta (I used Bionaturae Organic Whole Wheat Pasta)
  • ½ cup salsa
  • About 5 oz cooked chicken (142g) (I used short cuts)

Spray a medium skillet it non-stick cooking spray and warm over meadium heat.

Add the onion and peppers, and warm until just becoming tender. Add the cooked pasta, the salsa and the chicken. Stir for a few minutes to combine the flavors and serve!!.

Note: I topped with a bit more salsa for the photo.

    "I want a piece of chicken!" Roni, your videos are priceless. Just imagine when Ryan is a teen and sees these videos! LOL

    I've really become a big fan of yours! Love your recipes and I have you to thank for helping me to enjoy cooking again. Most diet recipes get so complicated and use such weird ingredients that it was no fun to cook. And, I love to cook as much as I love to eat. (Which is why I'm on WW) Anyway, you've shown me that it can be done and I actually relish the idea of searching in my kitchen to see what's on hand and what I can create with it!

    So I really think you should send your video posts into your local tv station (or even food network!) They would be silly not to give you a segment maybe once a week for healthy meals! 🙂 Can't wait to try this pasta!!!!

    This sounds yummy - and looks simple, delicious and healthy. I just can't seem to come up with recipes on my own (I guess it's just not my forte), so I'm really glad I found your site and I can try yours!

    PS - You probably hear this all the time, but Ryan is so cute! I always look forward to seeing him in your videos. We never know what he's going to do! I am so impressed that he eats peppers. My kids would never do that at his age - my own fault 🙁 You must be proud!
