A quick video of the toddler and I making lunch today! We were planning on something else (as I say in the video) but had to make due with what we had on hand. The lunch was just for me, the toddler had a sandwich and about 2 whole peppers by the time we were finished. :~)
- thick slice of onion chopped
- 2 peppers chopped
- 2 oz cooked whole wheat pasta (I used Bionaturae Organic Whole Wheat Pasta)
- ½ cup salsa
- About 5 oz cooked chicken (142g) (I used short cuts)
Spray a medium skillet it non-stick cooking spray and warm over meadium heat.
Add the onion and peppers, and warm until just becoming tender. Add the cooked pasta, the salsa and the chicken. Stir for a few minutes to combine the flavors and serve!!.
Note: I topped with a bit more salsa for the photo.
