    Vanilla Pudding Cups with Oranges and Pomegranates

    The little guy and I had some fun at breakfast with an old box sugar free pudding, a can of Mandarin oranges and an aging pomegranate we had in the fridge. Can you tell we need to hit the grocery store? ;~)

    Regardless, I LOVED this. The flavor combo was tasty and they were so much fun to make together. However, even though the little guy loves pomegranates plain after awhile he got sick of them in the pudding. When I asked him what he wanted to call our little creation he said. . .

    "Vanilla Pudding cups with Oranges and Pomegranates but I don't really like the Pomegranates."

    He cracks me up! Here's what we did. . .

    Ingredients

    • 1 1oz package of sugar free vanilla pudding
    • 1 11oz can of mandarin oranges packed in their own juice
    • ½ cup pomegranate arials
    • 1 ½ cups of skim milk

    Instructions

    Drain the mandarin oranges reserving the juice. It should be about ½ cup. Adjust the milk amount to total 2 cups of liquid when added to the juice.

    Whisk the juice, milk and pudding for two minutes. Add in the oranges and pomegranates reserving some to use as a garnish on top. (we made faces SO much fun!)

    Let set in the fridge for at least 5 minutes.

      Hmmmm good question. I'd just follow the instructions and replace some of the liquid with the mandarin juice. It should work!

      I live in Europe but brought jello pudding from Iowa on my last trip to see family there... I got the kind you have to COOK. Would this recipe work somehow with it?

      Yum! Pomegranates are totally worth the effort, in my opinion. The bf and I take turn being responsible for removing the arials, then we always share the whole bowl. It takes like ten minutes to get it ready, but it takes even longer to eat, which I LOVE!

      Awww. I love cooking with my son too.
      I have found that if a child is invovled with the cooking, they almost ALWAYS eat the food that is prepared. Plus, it's just plain good for them to cook with thier parents. It's quality time and educational.

      Ummm....don't know where all of that came from. Sorry bout' that. 🙂

      He looks like you ;)! So adorable. I learned recently that I really like pomegranates but they are too much work to really get much out of them lol. My hubby and I decided that the juice was so expensive b/c it was so difficult to get! Your recipe looks yummy though, especially with a kid!
