
This recipe isn't polished as I totally butchered the preparation BUT it was SO tasty I had to share the flavor combination. I'll make it again with more detail and repost but I thought this may give you some ideas. Of course you can go chicken instead of pricey scallops, they just happen to be on sale this week at the grocery store AND the child LOVES them. 🙂
So I paired the scallops with multicolored peppers smothered in a wonderful sweet sauce and served over rice.
The Sweet and Sour Sauce
Ingredients
- 1 cup crushed pineapple with liquids
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon ground ginger
- 1 tablespoon apple cider vinegar
- 1 tablespoon whole wheat flour
- 1 small sweet onion diced
Instructions
I whisked all of that together and added it to a large skillet with the scallops and peppers. The taste was fantastic my approach just needs some work and I'll leave it at that. ;~P
Even though my preparation wasn't perfect the dinner really did come out tasty and the child loved it. The husband could take it or leave it. In his defense he's not really a pepper or scallop man, so I can't really blame him. However, he did give me the traditional "I can see others really liking this." lol
So there you have it. I'm hoping to make it again in my NEW kitchen once I'm all moved in! ;~)

First time recipe user. I do not know what you mean by an imperfect approach, but you needs some effort in recording your recipe. No mention of cooking time for the scallops, how many oz or how many peppers or timing. A little diligence goes a long way.

TOTALLY would work great! Yup just saute and then add the sauce.

I have a bag of frozen stir fry veggies. Do you think that would work well w/ scallops? The peppers sound great.

Roni, thanks for this idea. We (the boyfriend and me) tried it last night and enjoyed it. We used more veggies, onions and mushrooms and made everything in separate pans as the boyfriend does not like scallops so he had chicken. It came out great. Here is something funny, I have been suggesting your recipes for years and made some for him ( he does most of the cooking though) but he never realized how popular you are. I pulled up GreenLiteBites to show him your recipe and he starts looking at you page and got excited. He was like who is this woman so I briefly explained to him who you were. Now he wants to know how he can blog so he can get advertisers too. Too Funny! He barely even knows how to surf the net. But I think you have a new fan as he was clicking on several of your recipes.

Sounds delicious Roni..As with the other commentor, I think I would also use shrimp or even chicken cut into strips since I prefer my scallops in savory sauces.
