
Once I got back from my third and final vacation of the summer -- more on that soon over on my personal blog -- I couldn't wait to get back to my kitchen. Traveling and cooking are my absolute two favorite things to do. One day, it's all I hope to be doing.
Anyway, this past trip, I took a Jamaican cooking class and learned so much. I hope to be making and sharing that dish soon. In the meantime, I come with this tasty garden salad idea.
I'm not sure I ever confessed this, but I'm not a huge fan of raw onion. I've discovered a way around this aversion with pickling. Simply soak raw onion in a vinegar (or in this case, lime juice) solution and viola!
Pickled onions. They add a burst of flavor to salads without the harshness of raw onion.
This salad came out way better than I anticipated. My initial plan was to use up some garden vegetables before they went rotten, but I ended up with a delicious salad I will be making again. Here's what I did:

Garden Salad with Quick Pickled Onion and Grilled Chicken
Ingredients
- Juice of 1-2 limes 2-3 tbsp
- 1 tablespoon olive oil
- 1 tablespoon maple syrup 21g
- 2 healthy pinches of salt
- ground black pepper to taste
- ½ of a red onion slices thin
- 4 oz raw chicken breast seasoned
- 2 cucumber chopped
- 1 garden tomato chopped
Instructions
- Make the dressing and pickled onion by whisking the lime juice, olive oil, maple syrup, salt, and pepper. Add the sliced red onion and coat them in the dressing. Set aside.Juice of 1-2 limes, 1 tablespoon olive oil, 1 tablespoon maple syrup, 2 healthy pinches of salt, ground black pepper to taste
- Heat a small skillet over medium-high heat. Spray with non-stick.
- Cut the chicken into small pieces and season. Cook the chicken in the skillet until no longer pink in the middle 4-5 minutes. Remove from the skillet and set aside.4 oz raw chicken breast
- In a bowl large enough to toss everthing add the chopped cucmber, tomato, dressing with red onion and cooked together. Mix well to combine all the flavors.½ of a red onion slices thin, 1 garden tomato chopped, 2 cucumber chopped
- Pour on a plate and enjoy!
Notes
- If you don't want to use raw chicken try a store-bought rotisserie or pre-cooked grilled. Any leftover cooked chicken would work!
- I used my own all-purpose seasoning salt on the chicken, but even just salt and pepper would work.
- This makes a monstrous serving and is quite filling even though there isn't much to it. Nutritional Information is for the entire recipe, but it is sharable as a side dish too.
