
Yesterday I was dreaming about a salad. Not just any salad, but a chickpea filled, cucumber, and red onion salad with a fun, tangy dressing.
Unfortunately, I had no cucumber or red onion. Well, that's a lie. I had a half of cucumber but it was a mushy mess and the only onion I have left this week is a really sad looking yellow one.
Suffice to say no fun cucumber chickpea salad for me but I still couldn't get the idea of this salad out of my head! So I made up the fun tangy dressing I had in mind anyway and it is AWESOME. Simple but a fun mix of flavors that really freshen things up!
I ended up cracking open a can of chickpeas and I ate a bowl of them mixed with this dressing. Sad, I know, but once the thought of the salad was in my head I had to satisfy it and I must say, I'm not sad I did.
This Dressing + Chickpeas = YUMMY!
Here's what I did…
Ingredients
- ½ cup (56g) of Fat Free Yogurt (I used greek)
- 1 tablespoon (21g) honey
- 1 tablespoon lime juice
- 1 teaspoon dried mint
- Tiny pinch of salt
Instructions
Whisk everything together!
That's it!
Makes just about 6 tablespoons.
I've since used it on wraps, it went great with some deli turkey, and a dip for carrots.
I'll give the nutritional info for 3 servings as I think most dressing use 2 tablespoons as a serving.

I tried this idea replacing the mint with Siracha sauce. That sweet, hot, salty combo was delicious.
