This was last nights dinner. Out of all my videos this one may be the longest, most boring example of parenting ever! In all seriousness here is just a sneak peak on catastrophes that happens...
- Ryan has entered the “Why” stage and he doesn't stop talking.
- I get “Bonked”
- That glass incident that wasn't worth a fight
- Toddler Camera Shake that I'm unaware of
- LOUD off camera toddler laughs and screams
- Off camera toddler water gurgling and bubble blowing
- Realizing I didn't have enough sweet potatoes
- The fly incident with a burst of sunlight
- Screen saver going on
- And many more...
Let's just put it this way, if I wasn't recording I think I would have screamed at him! It was just one of those, "I'm a toddler and I'm not going to stop" moments. You other mom's know! ;~)
HOWEVER...
It was GOOD! The meal, I mean. A fabulous, lite, comfort casserole meal! I'm not going to post any details. When I make it again I will measure and calculate nutritional information. For those on Weight Watchers, I estimated 4 servings, 4 points each.

Roni, I made this tonight varying some ingredients. It was so amazing and the texture and flavor was phenomenal!!

Wow, I just made this for lunch, and is it ever yummy! I cleaned out my vegetable drawer and threw in a hodgepodge that would have been unusable in a few more days had I not come across your fantastic idea. I made mine sans meat, cooked the veggies with a pat of butter and added a splash of soy sauce to darken the flavors, shook in some Italian seasoning, which REALLY added a bang, and some hot pepper flakes. Great stuff.
I love the toddler, BTW, he really makes the videos, even when he's being, well, a toddler! You're a great mom! I get a big kick out of seeing him gnaw his broccoli and pepper so possessively! And yes, he ate quite a bit of your sweet potatoes, no wonder he didn't want to try it after it was all done, he was full!

You truly do keep your cool! I get frustrated with DD quite easily! I have eaten Shepherd's Pie for years - my mom's recipe anyway. I've never thought of using sweet potatoes, I'll have to next time!
Here's how we do it:
can of green beans, layered on bottom of 9x13
mix ketchup & worcestershire (to taste-I like mine ketchup-y) with 1 lb browned ground beef. layer on top of green beans
add a layer of mashed potatoes
top with grated cheese
bake at 375 until cheese is melted
I don't measure my ingredients, just throw them together!
Next time I make mine, I'll use ground turkey, sweet potatoes, and reduced fat cheddar cheese to lower the points value!

whew...You pulled through during tough times. Although he might have been a partial distraction it would not be the same without the toddler. It is just a phase that we will all have to patiently wait through. 😉

Shepherd's pie in the UK is made with ground lamb, peas, gravy and mashed white potatoes.
Your version looks so much nicer that we are going to try it this weekend.

I just caught the end of the video that you put at the beginning and I have to say I can SO RELATE with you and Ryan! My DS was 4 in April. The bug thing is driving us insane too. I always tell him he's a boy-he's not supposed to care about bugs! And the why stage...oh gosh that's fun! 😉 My DS never stops talking either. I think it's a first born thing. But Ryan is so cute! I love it when he's in the videos!

P.S. I absolutely love that your "toddler" is in these videos. I think it adds so much to them! I have a 3 year old and a 1 year old and my 3 year old acts almost the same exact way as Ryan!! You are doing an awesome job!
