Sometimes I'm shocked at how combining a few ingredients can result in something totally amazing. This is a 3-ingredient salad brought together with the simplest of dressings and it's fantabulous!
I've made it quite a few times until running out of goat cheese. Now I must get more.
Friday I made it for a quick lunch and decided to record the process.
Easy, right?
Here's the details...
Single Serving Mustard Dressing
- 2 tsp apple cider vinegar
- 1 tsp honey
- 1 tsp olive oil
- 1 tsp whole grain mustard
- Pinch of salt
Salad
- 2 cups of greens
- 1 cup cooked beets, cut into chunks
- 1 oz crumbled goat cheese
Whisk the vinegar, honey, oil, mustard and salt together to make the dressing.
Toss the greens, beets and cheese with the dressing.
Done!
Really, how easy was that?!
