Happy New Year!
I had such high hopes for posting more over the holiday but time just got away from me. I was having too much fun just hanging out with the family. We spent so much time together. It was fantastic!
And super low key. This was the first year we didn’t have to travel. The kids are older so Christmas isn’t as hectic. Even New Year’s Eve was quiet. We watched a movie and then decided to go to bed early. I loved every minute of it. Especially all the cooking I did!
Now I have a fridgeful of leftovers, and I accept the challenge of transforming them into lunches for myself. This particular lunch was inspired by the end of the turkey I made the day after Christmas. You know, all those bits of meat everyone leaves at the bottom of the storage container? Well, I decided to use them to make a fun salad with whatever vegetables I had leftover from our veggie tray.
The result was tasty, light and went perfectly in a pita.
Speaking of, if you have this brand available near you I highly recommend it.
I found them under the deli counter at my local grocery store. They are a good size, thin, tasty and only 60 calories per pita (10c, 1.5f, 6p). I keep a pack in my freezer and pull one out when needed. They defrost in minutes. If you can’t find them in the grocery store, they are on Amazon, and no, this isn’t a paid post. I’m just a fan.
Anyway, here’s how I made the turkey salad for this morning’s lunch. I hope you had a fabulous holiday break!
Turkey Salad with Celery, Radishes, and Carrots
Yield 1 pita
Turn leftover turkey (or chicken) into a tasty salad with this simple idea that uses celery, radishes, and carrots.
- 50g non-fat Greek yogurt
- 100g cooked turkey meat chopped
- 3 carrot sticks chopped (20g)
- 2 radishes chopped (20g)
- 1 celery stick chopped (20g)
- 1/2 tsp poultry seasoning
- 1 tsp dried parsley
- juice from half a lemon (1 tbsp)
- salt and pepper to taste
Mix all ingredients together.
- I used the veggies I had leftover from the holiday but you could, of course, use whatever you have on hand. Just make sure you get some crunch in there.
- If you don't have turkey use chicken! It's would be just as good!
- I'm giving the nutritional info for the salad solo since you may use it in a different way or on a different brand of pita. Just be sure to count that separately if you track.
