The other night I was craving “something.”

You know the feeling. You just want to eat but aren’t sure why or what.

Yeah, that happens to me.

A lot.

The past few weeks I’ve been falling prey to the pantry (pretzels, crackers, chips, chocolate.) It’s been so easy to grab and plop in front of the TV.

I’ve learned to stop the cycle by getting creative.

So I rummaged trough my fridge and pulled out what I had to make something not only satisfying but light and tasty!

Red Pepper and Avocado Nachos All it took was a little effort and now I’m motivated to stay out of that darn pantry once again.

Here’s what I did….

  • 1 large red bell pepper
  • 1/2 of an avocado
  • 1 Mini Babybel Light
  • Cumin, chili powder, dried cilantro

Preheat the broiler.

Spray a cookie sheet with non-stick cooking spray.

Wash and cut the pepper into 1-2 inch chunks. Arrange on the cookie sheet.

Cut the avocado into small cubes and place 1-2 on each piece of pepper.

Cut the Mini Babybel Light into small cubes and place 1-2 on each piece of pepper.

Sprinkle with cumin, chili powder and dried cilantro.

Place under the broiler for 5 minutes and pile on a plate for a fun, light snack!

Of course you can use anything to make these: beans, leftover chicken, jalapenos, etc. I just happened to have a half an avocado hanging around and I was craving something cheesy.

Speaking of, my tip for storing leftover avocado is to place in a zip-lock bag removing as much air as possible. Then just refrigerate. It will last a few days.

    I have made something similar to this – just a little feta cheese and cracked black pepper – if you want you can drizzle a little olive oil and broil for a few minutes… delish!

    This is a very interesting recipe. I never thought avocado can be matched with red pepper. I just showed this recipe to my husband and he told me we’re going to make one. Thanks for sharing! :-D

    Love the idea of using fresh peppers as a base (replacement for higher calorie chips or crackers). So simple but so effective. Can’t wait to try this.
