Grapefruit Oatmeal Cup - little bean

my sleep schedule isn’t the only thing suffering. My diet has been horrendous. It’s just too easy to say yes to the husband’s donut and pizza offerings. He’s so BAD!

But I’m making progress. This morning I started my day with a bowl of yummy goodness. It was a fun twist on two of my favorite breakfast options–oatmeal and the glorious grapefruit!

I used Coach’s Oats as they sent me a sample to try. It has the texture of steel cut but cooks up in only 5 minutes like Old Fashioned. I LOVE it! Click here to check it out.

I used the hollowed out grapefruit skin as a bowl just for fun. It made the serving size look HUGE and added an element of fun with minimal work. It’s the little things that can make a big difference. Grapefruit Oatmeal Cup

  • 1/2 of a large ruby red grapefruit
  • 1 serving of oatmeal prepared according to package (rolled or steel cut is best)
  • 1 tsp honey
  • 1 tbsp sunflower seeds (8g)
  • pinch of cinnamon

Prepare the oatmeal according to the package. While cooking, cut the grapefruit.

Run your knife along the outer edge of the grapefruit and then cut the triangles of fruit out of the halve following the natural divisions between the pieces. Remove the sections and set aside. Gently squeeze out the remaining juice from the half and add it to the sections.

Using a spoon, scrape out the half hollowing for our grapefruit bowl.

Once the oatmeal is done, add the grapefruit sections with juice.

Stir to combine and add to the "grapefruit bowl."

Drizzle with the honey, top with the sunflower seeds and sprinkle with a pinch of cinnamon.

I enjoyed my bowl of citrus yumminess while the Little Guy had some waffles. I made a bunch to freeze for school days.

Little Bean is still doing well on the breast milk. We are settling in to a nice schedule. The hardest part is over.

It was nice having both my boys in the kitchen. :)

    Congratulations Roni! They sure are cute! I know what its like to have little little babies. My oldest was born at 37 weeks due to some problems in utero and was 4 lbs. 13 oz. My youngest was born 33 wks gestations (7 weeks premature) due to water breaking (guess he really wanted out) and was only 4 lbs. 3 oz. They are easily tired due to such a small weight, but your guy seems to be doing really well!

    I am soo making this for breakfast tomorrow. My daughter LOVES the quinoa with citrus, minus the kiwi, so she will adore this. Glad you all look like you’re doing really well! Have a great day!

    Awww, love the pic of the boys together! So precious. :) I love Coach’s Oats! They are actually located not too far from me, so I tend to always pick some up at local race expos to have on hand.

    FYI…the PITH is the most nutritious part of the grapefruit, which you’ve thrown away. Try eating that, and peeling the grapefruit like an orange, rather than “hollowing it out”.
