Fiesta Chicken Salad

I’m “lucky”.

That’s what most people tell me when I confess I don’t like mayonnaise and I never did. Honestly, for as long as I can remember, the stuff has always grossed me out. It’s white, goopy and greasy. Why would you ever want to ruin a sandwich by slopping that all over the bread? (I’m a mustard girl ALL the way!)

Yes, I realize I just insulted all you mayo lovers out there and I’m sorry but seriously YUCK!

Why am I telling you this? Well, the other day I was out having lunch with a friend and she was telling me how good the chicken salad was at a local sandwich shop. Considering traditional chicken salad is made with mayo I stay away but that along with seeing these gorgeous tomatoes as the store gave me the idea to create a mayo-less version. And I’m SO glad I did!Fiesta Chicken Salad

  • 8 oz leftover or cooked chicken breast cut in cubes
  • ¼ cup diced red onion
  • 1 cup diced peppers (combination of red, green and yellow)
  • ½ jalapeño pepper diced (from jar) (more of less depending on taste)
  • 1 cup diced tomatoes (combination of cherry, plum and exotic – if you have them)
  • 2 tbsp fat free yogurt
  • 1 tbsp red wine vinegar
  • 1 tbsp jalapeño liquid from the jar
  • Juice of ½ lime or about 2 tsp
  • ½ tsp chili powder
  • 1 tsp dried cilantro

Put the chicken, onion, peppers and tomatoes in a medium bowl.

In a small bowl whisk the yogurt, vinegar, jalapeno liquid, lime juice and spices.

Pour the yogurt dressing over the chicken and veggies and stir to coat everything.

Below is the tomato sampler I found at the store this weekend along with the finished salad. Those tomatoes were so beautiful and SO delicious!

Stuff your favorite whole-wheat pita or top a bed of spinach leaves for a fabulous salad.

    I don’t like mayo either except the TJ’s Wasabi mayo but that is a rare treat. Too bad I don’t like tomatoes or bell peppers otherwise this would be super yummy. I might try it with mushrooms and other things that I do eat because the yogurt mixture sounds really good!

    Mayo freaks me out too, I don’t go near it.. your salad looks delicious though! I esp. love that you used cilantro and jalapeno peppers!

    Roni, I ditto everyone’s comments on how much of an inspiration you are. I check in almost daily to see what new things you have came up with.

    I must say you have the best produce stores. Your produce always looks scrumptious in the pictures. Tomatoes in Illinois don’t look near as appetizing as yours!

    Amen to the mayo haters! When I was a kid I saw how mayo is made – raw eggs and oil whipped together – DISGUSTING!! I haven’t touched the stuff since. This recipe looks awesome especially for those of us who want to bring something to a party but can’t bear to make potato or macaroni salad. Go Roni!

    Ugh..ok I stumbled onto this site and I’m addicted to it now!! My best g/f comes for dinner once or twice a week and we have committed to making only healthy meals.
    I used to go to WW and actually became a lifetime member- havent been for ages and put back on 13 lbs. Roni- I’m 5′10 and weigh in at 168.5 as of today. I was 173.5 on Dec 21st . I’m also smoke-free since Jan 1 yeahhhhh!!!!!!!!! Feels great. I see you’re down in the 140s. WOW!! I think that might be a bit low for my body type even though I’m a bit taller than you. I was quite comfy at 160 so i’ve kept that as my
    next goal.

    I really wanted to enter your contest so I cut and paste the code. I’m sure I probably messed up :-( Oh well…hopefully I get an A for effort ;-)

    Love this recipe. I put my own little twist on it. Took a pita and topped it with a little cheese. Warmed it up in a frying pan until the cheese melted and the pita was crispy. Warmed up the chicken salad and used it as pizza topping. YUMMY!!!!!
