    Whole Wheat Blueberry Pancake Waffles

    What's a pancake waffle you ask? Well it's my answer to not really knowing the difference between waffle and pancakes. I *THINK* waffles generally contain a bit more fat and sugar to crisp up more but I'm not sure. Normally I just use pancake batter in the waffle iron leaving them in long enough to crisp up and I've never had a problem. Then again I'm not known to follow any traditional rules when cooking. If it's tasty and we like it then what's the problem?

    So this morning little guy asked to make blueberry pancakes and then changed his mind to waffles. You gotta love a the fickle mind of a 5 year old. 🙂

    Normally I would make my Quick Whole Grain Banana Pancake batter but I'm all out of ripe bananas. My next go to pancake recipe is my original 100% Whole Grain Pancakes that I made years ago but I'm all of out oatmeal (yea... I need to go shopping something fierce.) So I whipped up a new batter this morning.

    It worked beautifully! I'm sure it would also make great pancakes but I haven't tried it yet. If you're up to it give it a whirl and let me know in the comments how they turn out. I'm pretty confident they'll be just fine.

    Here's what we did...

    Ingredients

    • 1 cup white whole wheat flour (120g)
    • 1 teaspoon cinnamon
    • ½ teaspoon baking soda
    • ½ teaspoon baking powder
    • 1 cup almond milk (8oz) (could use skim)
    • 1 egg
    • 1 teaspoon vanilla
    • ¼ cup unsweetened applesauce (61g)
    • 1 tablespoon honey (21g)
    • ½ cup of blueberries (74g)

    Instructions

    Mix the flour, cinnamon, baking soda and baking powder together in a small bowl and set aside. I mix it with a fork or whisk to help aerate it a bit.

    In another bowl whisk the milk, egg, vanilla, applesauce and honey together until frothy. Add the blueberries.

    Pour the flour mixture into the milk mixture and continue to fold until combined but don't over mix.

    Add the batter to your skillet or waffle iron. I spray the iron with non-stick spray since these contain no additional fat. Using my square iron I get 4 batches (8 waffles) and they cook for 4-5 minutes making them nice and crisp.

    Little guy loved them with a bit of jelly. I ate mine straight up with some extra fresh blueberries on top like you see next to the silly bands. 😉

      Hi Roni!
      These seem delicious and I want to thank you for your ideas, they help me a lot, especially since it's cold now and it would be sooo easy to grab a chocolate bar or a cake bought at the mall, so whenever I crave for something sweet, I just browse your website!

      Do you think this recipe also works with one ripe banana instead of honey?

      i made these this morning. bf gave me a "ooh" and a kiss after tasting them! i think i want to try them without the blueberrys, or maybe with some pumpkin instead. he also like the raspberry idea.

      plain, waffles are SUPER tasty with peanut butter.

      I think it's 5... On my new recipes I proved the protein, carbs, fat and fiber so you can calculate. I'm still trying to figure a few things out before I update 3 years worth of recipes.

      Maya - It's going to really vary based on your grill, or if you have electric vs gas. I find medium on my gas stove perfect but even then sometimes I have to lower it while cooking because it gets too hot. Especially is there is a lot of time between batches. I just made these on a new griddle I got for christmas and If I remember I think I set it to 300 degrees. Hope that helps!

      I just tried this recipe for my family which includes a picky toddler of 15 months and they were a huge success!! My only question is what temp should they be cooked at, I cooked them on med low and they were a touch burnt.

      I made these for breakfast this morning, and they were awesome! I used raspberries instead of blueberries, because they were on sale-- delish! I wondered about adding so much cinnamon, but it turned out great. I think the extra flavor helped keep them interesting since this recipe has virtually no fat. Oh, and I replaced almond milk with light vanilla soy, cause that's what I had.
