Warm Blueberry Chia Pudding

I needed a break from eggs and dinner leftovers for breakfast. It's been cold in these parts and all I wanted was a warm bowl of awesome.  Normally that means oatmeal, but I'm 20 days into Whole30 and there's no giving up now!

I rummaged through my pantry for something to cure my craving.

Chia to the rescue!

Not everyone is a fan, but I happen to enjoy the texture of these seeds, especially warm. They take on any flavor you throw at them and they make a super satisfying breakfast.

The bowl of warm chia looked so good even The 10-Year-Old wanted a taste!

I doubt I'd get him to eat a whole bowl but he went back in for a few bites. That's a win in my book!

Warm Blueberry Chia PuddingHere's what I did..

  • 1 cup (140g) frozen blueberries
  • 1 cup water
  • 3 tbsp chia seeds (36g)
  • 1 tsp ground cinnamon, plus more for sprinkling
  • ½ ripe banana, mashed
  • Sprinkling of sunflower seeds (10g)
  • Sprinkling of slivered almonds (10g)

Add the blueberries, water, chia and cinnamon in a small pot over medium heat. Cook for about 5 minutes allowing the blueberries to defrost and the chia to thicken everything. I smashed as many blueberries as I could, releasing their thickening pectin as well.

Once the mixture is thick, stir in the mashed banana.

Pour everything into a bowl, top with the sunflower seeds, almonds and a dash of cinnamon.

Blueberry Chia Pudding

The recipe makes a huge serving for less than 300 calories. It's cold-weather comfort food for breakfast. I love it!

Please excuse my bad photos. I never seem to be cooking when there's daylight out there anymore. Bring on spring!

    I don't even know how or when it happened, but I got out of my chia habit a month or so ago. With the crap weather we've been having, this might be my breakfast tomorrow! I actually have everything on hand, lol!

    Looks great! Do you think I’d need to adjust anything if I use fresh blueberries? Just bought a bunch of them on sale today 🙂 Thanks for the recipe!
