VitaMuffinMix Recipe Contest – Winner Announced!

Updated: Oct 16, 2020 by greenlitebitescom · This post may contain affiliate links · 4 Comments

Is it possible to be sad and happy at the same time? I’ve had so much fun running this contest. Reading and trying all the wonderful ideas but at the same time, it was so much work. I felt more pressure photographing other people’s ideas then my own and I really don’t like the responsibility of picking a winner. It’s stressful because I want everyone to win. I really do!

That being said, the competition was TIGHT! The husband and toddler made great sacrifice (*wink* *wink*) trying all the fabulous treats and my co-workers reaped the benefits of leftovers. Everyone loved everything, especially me!

    OK, here goes.

The winner by one teeny weenie itsy bitsy point is….

    Ya ready…

    Drum roll please…

    *tat tat tat tat tat*

    VitaBrownie Pizza

    Brownie pizza

It’s fun, it’s creative, it easy and it taste great! I mean a brownie pizza, COME ON! ;~P

Thanks for making the contest a lot of fun. I hope you guys enjoyed it.

      Excellent choice Roni!

I made a version of this for Easter.
One, I was SO excited that all of the mixes are available *way* up here in Nowhere, Maine AT my grocery store. (No shipping charges and waiting for me! Yippie!)

And two, I was visiting family in Mass who I knew were not planning a WW-friendly meal, or weekend for that matter. I had to take matters into my own hands, including bringing fixings for my Italian-fresco version of your Spaghetti Squash recipe, and Vita-brownie Pizza for Easter Desert.

I made a Berry Pizza, and the WW points were the SAME.
      Bake the brownie as usual.
Mix 8 oz softened FF cream cheese with 1/2 cup Splenda and 1 tsp Van. Extract.
      Spread on the brownie.
Top with 1 cup sliced strawberries and 1 cup blueberries.

If you know how to make a Balsamic Vinaigrette reduction, it is excellent drizled on top. Or you can use a flavored SF sryup, like Chocolate or White Chocolate Torani.

The NI also holds if you use more berries, up to 3 cups! So go wild!

The relatives I was visiting are not fat-free-anything fans, so I compromised and used RF (or Neufchatel) cream cheese. That brings the pt value up to 3 per serving.

So there you go - Berry Brownie Pizza! You have to try it sometime. It's awfully pretty!

And one last thing - being a frequent Fruit Pizza maker, before WW, I am used to a thinner "crust" on my desert pizzas. In my opinion, you could split the brownie batch between 2 cake pans and come out with a more typical desert pizza, with less calories and pts. Just as good too. Plus I wonder if, with the divided NI, you could "afford" to throw in a few extra chocolate chips in that brownie batter without adversely affecting the NI. Just a thought. I'll have to try that next time.

Again - EXCELLENT choice on the winner Roni and family!

Congrats to Christie on her win! I had fun participating, and enjoyed being a finalist with my Ooey Gooey Deep Double Chocolate Muffins. I look forward to the next competition! Thank for having the contest, Roni!

Thanks Roni for the contest! I'm so happy that I won!

Trina - that's where I got the idea. I used less chocolate, less strawberry jam (and the sugar free kind), and VitaBrownie mix instead of the sugar cookie.

I really wanted to have a pizza party at my house for New Year's Eve and make a savory pizza and a desert pizza. I couldn't find a recipe for a desert pizza that was reasonably healthy so I just modified Robin Miller's and came up with my own healthier version.

This is the same recipe Robin Miller used except instead of cookie dough, it is brownie mix.

      Looks good.
