    VitaBrownie Pizza Contest Finalist 3

    Hmmmm Pizza and chocolate. Ok, who’s bright idea was this?!? Oh yeah, it was Christie our third featured VitaMix Contest Finalist.

    I was really looking forward to making this one with the toddler but the brownies took so long to cool; he had to go to bed! That being said, the husband acted like a toddler when he saw it, so I guess that kinds counts as kid approved. He was like, “WOW, it really looks like pizza!”

    Then we both proceeded to eat way more then a serving. It was just SO good. The brownie mix came out perfect in a round cake pan. The strawberry jelly and white chocolate made it all the more decadent. It was such a simple, fun idea that I would really like to bring to party or serve at a BBQ.

    Ingredients

    • 1 package of VitaBrownie Mix (Chocolate Brownie Mix)
    • 2 egg whites
    • 1 and ¼ cup water
    • ⅓ cup Smuckers Sugar Free Strawberry Preserves
    • 1 oz. White Chocolate, shredded finely (I chopped it)
    • 1 serving Strawberry fruit jerky, cut into 1-inch diameter "pepperoni" rounds (I used two Fruit Leathers)

    Instructions

    Mix and bake the brownie mix according to package directions.

    Once brownies have completely cooled, top with preserves, white chocolate and strawberry "pepperoni".

      This is the same recipe Robin Miller from FoodNetwork made except it is brownie mix instead of cookie dough.

      Michelly - LOL nope, You want to know what I used. It wil make you laugh.

      the top of my Ketchup bottle. LOL

      I cleaned it out and then used it like a cookie cutter. Worked like a charm!!

      I can't speak for Roni, but when I made it, I used a knife and a device that's made to measure pasta. I'm sure you won't need to do that -- I got one as a wedding present and it just happened to be in my sight while I was looking for something to use. If you have a cookie cutter that's small it would work just fine. Or something else that looks like it's about the right size to use as a template.

      Wow! That looks good. I know I'd have to make it to bring to a party or family gathering, because I'd polish off the whole thing in no time! It will be great for tailgaiting this fall. How did you cut the fruit leather "pepperoni"? Do you have a small round cookie cutter?

      Oh man, that looks GOOD!! I always wondered if you could make the mixes in a cake pan and now I know you can! I really wanted to enter this contest (I have about 6 boxes of Vitamix in my pantry) but I'm just not that creative. I can't wait to try this!

      Rebecca - Honestly, I like the mixes better then the packages. They haven't been frozen yet. And my DH LOVED this. It was really the first dessert he eaten not from a package in a long time! lol

      Don't want to offend any Catholics out there, but I just HAVE to say..

      Holy Mary Mother of GOD! That looks good.

      I used to make desert pizza. You know, with the sugar cookie crust, tons of real cream cheese, sugar, LOADED with topping. I do believe Christie came up with one heck of a nice replacement. I can't wait to try this one!

      I have never tried the mixes before but have tried the prepackaged ones and I don't know that my DH would love the brownies without a big scoop of ice cream. But if your DH likes them I think mine would also. Do the mixes taste different than the package? I know that they would be cheaper.
