Spinach Egg Cake Breakfast [video]

I'm not sure if you know, but I (inconsistently) keep a food journal on MyFitnessPal. I also use it now for most, if not all, of my nutritional calculations.

Since keeping it, I've had a few questions about what I eat, especially with my consistent breakfast of 2 eggs, 1 cup of spinach and 1 tablespoon of bacon bits. My answer may not be too glamorous but it is truly what I eat most days for breakfast. When I'm not in the mood for eggs, I'll whip up a smoothie.

Here I am this morning straight from the gym. Don't I make this blogging thing look glamorous?

    I have made this SEVERAL times - and made it for my kids and niece - and it is soooooo good! When I told Elmo and Megan it was a "Roni" recipe - they said "SWEET" - and ask for more! LOL!

    Roni, today I changed up my egg/spinach breakfast by adding a single chopped smoky link lite and about 1/2 oz. of shredded cheese along with the eggs and spinach....i LOVE spinach quiches and this reminded me of one with just the taste of the swiss!!! so good.
    the greatest thing: i can eat this and not get hungry til lunch!!!!!!

    Love the video. I really like the idea of mixing everything together in the same bowl. I usually make an omlet of sorts and then just throw the spinach in. I will definietly try this next time.

    I made this for my breakfast this morning adding 1/2 oz sharp shredded cheese...added the salt and pepper as recommended! SOOO GOOOOD!!! AND I was never hungry til lunch. I've eaten eggs many times and needed a midmorning snack but not with a cup or more of spinach so I am thinking the added spinach added just the amount of fiber needed to fill full!!!!!

    Great video! I love it when I come to work in the morning and check my emails to see there is one from you. I always read those first and LOVE it when there is a video attached. You have the best food idea's of any other site I've ever seen. I have to admit though, I gasped when you grabbed that hot pan handle with a bare hand. That must be one of those fancy pans where the handle doesn't get hot. Nice! Loved the video! Makes me want to eat it and I don't eat eggs so hows that....ha! Have a great day Roni!

    That was fun! I was smiling the whole entire time I watched you making this video. When you put it all in the same bowl and mixed it up, I thought how genius! I don't do ketchup on my eggs, though my sister does. But, I would have to add some shredded cheese. I am also on MFP and am now off to find your blog! Cheers and keep on making these videos! Kelly

    I love this video. Why? Because you are you. You make your "go to breakfast" yet - you teach as you go - because there is always someone who is just now finding you and has NO idea how to cook or make simple healthy food. You are endearing - and real. Please keep doing that. That is why I started following you YEARS ago - and will continue to follow your blog. You are you. Thank you - for real. :O)
