Simple Sweet Potato Hash

I woke up with a hankering for a diner style breakfast this morning. I just don't think I've been eating enough breakfast recently which makes me starving by early afternoon. Then I end up picking my way until dinner and snacking all night until I go to bed. I don't like this pattern. It leads days like this one. Seriously, I had so much ice cream last night it made my belly hurt.

So I decided on making a nice filling, well rounded breakfast today and I'm happy to say it kept me completely full and satisfied until lunch.

The key to this dish is the technique. I used batches of water to steam the raw potatoes right in the skillet. It really worked like a charm and gave me a tasty hash with just the right combo of soft potato and burnt onion, which I love. Simple Sweet Potato Hash

Here's what I did...

  • 1 tsp olive oil
  • ½ sweet onion chopped
  • 1 small to medium sweet potato cut into small cubes
  • kosher salt
  • 1 tbsp real bacon bits

Heat the oil in a non-stick skillet over medium-high heat. Add the onion and cook until browning. Add the potato cubes and a pinch of salt. Leave them on the heat for at least 2 minutes and flip then leave alone for another 1-2 minutes.

At this time your skillet should be awfully hot and pretty dry. That's ok. Add a half of cup of water and stir the potatoes and onions so nothing is sticking to the bottom of the pan. Cover and leave alone.

Check in about 5 minutes and the water should be all evaporated. Stir the potatoes and assess their doneness. If they are still firm, add another half of cup of water and repeat. Mine were perfect after two steam sessions.

Once all the water is evaporated and the potatoes are done to your liking, lower the heat to medium, add the bacon bits and stir. Cook for another minute just to combine the bacon flavor.

I served the entire batch with 1 egg and 2 egg whites scrambled. It was a perfect, filling, well balanced breakfast for me! I love how sweet potatoes scream fall and I never really thought about having them for breakfast before. I may start doing this more often!

I'm giving nutritional information for half the recipe although I will admit I ate most of it by myself. All of it was too much but half of it was two little for me this morning. 😉

    Ah-mazing!!!!!!! We made this tonight and we were in love. Didn't have onions, so I added dried cranberries and cinnamon. Thanks for the recipe and the cooking technique, we will be making it for years to come!

    I have a video on how i cut sweet potato but no necessarily in cubes. Just cut the fry pieces in small chunks. This may help....

    OMG! I just made this today and it is AMAZING! As per my hubby's request I made my own bacon bits with maple flavored bacon and then I fried my onion and potatoes in the little bit of bacon grease that was in the pan. And I didn't need a half cup of water to steam my potatoes in, maybe because I soaked them in water so they didn't turn brown? Anyway, two steams with 1/4 cup of water each and they were good. I did have some left over liquid in the pan so I kept it on a low setting with no lid while I made my scrambled eggs (four regular eggs then most of a pint of southwest style egg beaters) and it was great. My husband liked it, I was afraid he wouldn't, but he's pretty adventerous. My Four year old son would not touch it, though he did smell it. And my 8 year old daughter said she liked it, as well. Thanks for an awesome breakfast idea. Do you have any tips on making peeling and cutting of sweet potatoes easier? Thanks, Roni!

    I was looking for a starch dish to make with my sweet garlic chicken tonight and I found it! Can't wait to have these tonight. I'll be making regular hash for the boys though, they won't touch sweet potatoes.

    Before I finished your first sentence I got to curried and I thought coconut milk too. I agree and you can do a fine shred on carrots and fresh ginger (if you have any and add it to the pot so it pretty much is unrecognizable (MORE VEGGIES!). But just a tiny bit of fresh ginger. I freeze mine so I get a fine grate on my micro plane and because it freezes and lasts so long in the freezer.

    I think the soup should be 75% sweet potato and 25% other stuff. I think you should make your hash again and then add in some stock to it and then blend it up. See how it tastes and then go from there. Maybe you can just add water to the hash so you can really keep the sweet potato flavor. Top it with bacon bits...

    My brains been ticking... I'm thinking curried sweet potato soup with some coconut milk! Or is that too untraditional?? I have no idea what sweet potato soup is suppose to taste like! I've never had it before!

    Okay, I demand more sweet potato recipes! Yours always taste so good! I have always hated sweet potato bisque/soup because its either too grainy, too creamy or to grainy and creamy. None ever come out right! Maybe one of your good tried and true recipes could be spun up in a blender with home made broth and cream/sour cream with your blend of spices. I think you need to give it a shot.

    Oh and I wanted to share a quick trick with you, place the sweet potato in the microwave for 2-4 mins (depending on how big) and then chop into cubes and "fry" up with 1 tsp. of Olive Oil or non-stick cooking spray till crispy. works like a charm and takes no time!

    HAHAHA!!! I was just looking at my table trying to figure out how to get rid of all my sweet potatoes. I was probably make your broiler steak potatoes with them but now I have a bacon-ey way to make them too 😀
    And plus sweet potatoes are excellent cold and this would be awesome with some real maple syrup.
