
Sometimes I forget just how simple and easy a healthy, satisfying meal can be. Today for lunch I used 4 ingredients to make a really yummy lunch!
It's Sunday and in my house that means we do our best to clean up and get ready for the week. I document lots of our "Sensational" Sundays on my weight-loss blog and it always helps me get in the right mindset to tackle the days ahead. And with Thanksgiving looming, I needed a good sanity check today.
We spent most of the day rummaging through our stuff looking for things to donate. I'm starting The Happy Thanks-I-Can-MOVE-Giving Challenge, and part of my commitment is to donate at least one item to charity. Well, I did more than that, finding lots of old kitchen appliances that haven't been used in years!
We took a break for lunch and I wanted something simple. The boys had leftovers but there wasn't quite enough for all of us. So I took some cooked spaghetti squash (I baked it and some butternut for the week) and made the simplest thing I can think of. The result was a warm, tasty plate of yumminess that really filled me up!
Here's what I did...
Ingredients
- 1 and ½ cups ." href="https://greenlitebites.com/2012/10/20/cook-whole-spaghetti-squash-video/">cooked spaghetti squash (230g)
- ½ cup salsa (I used medium from Aldi)
- 3 oz cooked chicken breast
- 1 oz Monterey Jack cheese, grated
- Sprinkle of dried chives or cilantro (optional)
Instructions
Pile the spaghetti squash, salsa and chicken on a plate.
Zap in the microwave for about a minute just to warm everything up. (My squash was still a little warn from the microwave, so it didn't need much.)
Top with cheese and chives.
Eat!
Super easy, right? I know spaghetti squash is one of those what-the-heck-do-I-do-with-it ingredients but if you go back to basics like this, it's a great start to some simple, tasty dishes.
