
I was SO excited to make my first VitaMix Contest Finalist this morning! Being forced to make a chocolate entry as I only had one package of Deep Chocolate VitaMix (Chocolate Muffin Mix) (I’m waiting for my shipment to come in so I can make the rest),
So I chose Mary’s Chocolate Waffle cups. I thought they would make a fun Sunday breakfast treat for the toddler and I and they did. We had a blast!
The toddler had a hard time waiting for the cups to cool so we shared a warm one out of the waffle iron. He loved them like that (we both did). The husband waited and shared one with me. He gave it a fun ‘thumbs up’ and was surprised how much he liked the raspberry and chocolate together. I was just surprised he liked it! LOL
Ingredients
- 1 package Deep Chocolate VitaMix (Chocolate Muffin Mix)
- 1 teaspoon baking powder
- 2 cups water
- 2 large egg whites
- 1 tablespoon canola oil
- 1 quart fresh raspberries or mixed berries of choice
- 1 cup low-fat/sugar-free whipped topping (optional)
- 12 fresh mint leaves for garnish (optional)
Instructions
Preheat non-stick waffle maker. In a large bowl, combine and mix all ingredients except raspberries, topping and mint. Prepare waffles following waffle maker directions. When done, immediately drape each hot waffle over a custard cup (I used cup turned upside-down) a and allow to cool. Waffle will form a cup.
Fill each cup with raspberries (I used strawberries, raspberries and blueberries), top with whipped topping and garnish with a mint leaf. Chocolate cups can be frozen for later use.
Here are two pictures of us this morning. The first is of Ryan pointing to a waffle telling me he wanted one ad the other was his reaction after I told him I wanted a bite of his. Notice he almost pushes his plate off the table trying to get it as far away from me as he could.
We actually got 14 waffles but it will depend on your waffle maker. I’m still doing nutritional info for 12 servings just in case.

I have an aversion to mail ordering food products - silly I know.
So when I saw your contest, I quickly demanded my grocery store start carrying the mixes in the Natural Foods section. Wouldn't you know it - I finally saw them there this Saturday.
I'm still going to play around with them, even without the lure of your contest.
I'm thinking of combining either the deep chocolate muffins or the brownies with some apricot preserves in some way. Maybe in a loaf pan or mini-bunts.
The other idea bouncing around in my head is using the banana muffins as a base and incorporating chocolate peanut butter, either the Deep Chocolate Dreams PB from Peanut Butter & Co., or mixing PB2 with GOOD grated cocoa.

I just got a waffle iron for Christmas, so I think I'll have to try this out. I make my son chocolate pancakes (with spinach in them!) for breakfast and he gets a couple of squirts of whipped cream on them, so I think he will really like this.
I've never used/had any VitaMix stuff. Can't wait to give it a shot! Their website says our local grocery store sells it, so I will have to see what they have. Hopefully its not just the pre-baked stuff.

That's a fun idea to shape a waffle like a cup, and a chocolate waffle - can't go wrong with that! I'll be curious to see how the other finalists recipes turn out.
