Yesterday I was looking for a quick, tasty breakfast and smoothies always hits the spot for me. Normally I go straight to the frozen fruit but this time I went for something a bit more seasonal. PUMPKIN!
Way back when I did a produce pick for fresh pumpkin but for the most part I stick to the canned pureed stuff. It's just so darn convenient!
Now yesterday the toddler LOVED it. He actually drank most of mine. But this morning he declared he didn't like it. I think it was because he first had a strawberry one and this just isn't as sweet. Either way I'm declaring it toddler approved! 🙂
Ingredients
- ½ cup canned pumpkin (120g)
- ½ cup vanilla fat free yogurt (I used a 4oz Activia- it was all I had)
- ½ cup soy milk (I used light chocolate... again all I had! I think vanilla would be better)
- ½ teaspoon pumpkin pie spice
- 2-3 ice cubes
Instructions
Place all ingredients in the blender until smooth!
Can't get much easier then that!

I think I'll try this tomorrow with the canned sweet potatoes I have in the pantry. I make ice cubes from a chai spice blend tea (it's just the spices, no caffeine), and I'll use those, since I don't have any pumpkin-pie spice, vanilla soy milk, and a little plain Greek yogurt. I'm looking forward to it, now!

this is so yummy. made some pumpkin pie yesterday, so made this with some of the leftovers...definitely a keeper - i added a scoop of protein powder to this to make it a "keep me full" meal 🙂

Love this recipe! Just tried it for the first time after saving it months ago... substituted a 60-calorie sugar free Jello vanilla pudding for the yogurt (I'm all out) and 1/2 cup of Almond Breeze for the soy milk... delicious! Lots of pumpkin pie spice and a shot of Torani sugar-free gingerbread flavored syrup takes it over the top! Thanks!

Loved this recipe. Very filling. Also toddler approved by my little one. He gets very mad when I have to put it in the travel mug on days we are running late and he does not get any.

This does look good. I always have canned pumpkin in my pantry. I think I will use my unsweetened almond breeze. I think I will do it for an afternoon snack, It is too cold in the mornings for me to sip on an icy drink. I really like that it is only 2 points usually smoothies get a little high for what I want to "spend".
