    It's Christmas Eve! YAY!

    I actually made this up yesterday, snapped the most awesome shots of the little guy eating it and then accidently deleted them off the camera. 🙁

    So I decided to make it again this morning. It came out even better when I discovered dipping graham crackers in it was a little taste of heaven. Like dessert chips-n-dip. I'm seriously thinking of putting it like that for a New Years party we're having.

    The little guy liked it, although I'm thinking it was more the crackers then the yogurt. Either way, I got some good stuff in him this morning. 😉

    Ingredients

    • ½ cup canned pureed pumpkin (120g)
    • ½ cup non-fat yogurt (I used greek) (115g)
    • 1 tablespoon honey (21g)
    • ½ teaspoon vanilla
    • 1 teaspoon ground cinnamon
    • ¼ teaspoon ground nutmeg

    Instructions

    Mix all ingredients together.

    Viola! 🙂

    I used Trader Joe's Old Fashion Graham (our favorite and the only whole grain ones I know of) crackers as my "spoon".

    Nutritional is only for the yogurt, not the crackers.

      Too much sugar. Way too much. Low fat of non fat yogurts or milk have added sugars in them. I go for fuller fat kinds of Greek yogurt like Astro's plain Greek yogurt. So good, and only 2 grams if sugar while low fat or non fat has 7....

      Gave this a try almost immediately after reading it. My 4 year old loves it, but the 2 year old had only 1 bite. I enjoyed it. I put a little Kashi cereal in it to give it a crunch. Next time, I think I'll use a little less nutmeg and agave nectar instead of honey so that I can share it with my infant.

      OMG this was so good. For breakfast I combined this with a half cup of almond milk and some ice to make a pumpkin smoothie. It was amazing!!!

      Great idea. We still have frozen pumpkin puree left over from Halloween and our kids love yogurt, so this is a great treat for them.

      This is also yummy (although no as "healthy") if you use Cool Whip (FF) or *gulp* marshmallow fluff with all of the above ingredients rather than yogurt and Ginger Snaps instead of graham crackers . I served it as dessert instead of breakfast. It TOTALLY saved me from a pumpkin pie binge this season!

      Hi Roni, I commented with a similar concept on roni's weigh a while back, when you were asking us for comments on favorite snacks. You can knock the calories back with another product from TJs. 1/2c TJs greek (nonfat, plain) yogurt, plus 1 TBSP TJs pumpkin butter = 100 calories. Of course, I don't get to count my yogurt treat as a fruit/vegetable serving (since it doesn't include 1/2c real pumpkin like yours does), but its super quick to put together, and the pumpkin butter has the perfect blend of seasonal spices. I've replaced my desire for pumpkin spiced lattes with this snack -- much more filling!

      Looks yummy. I made something similar one day. While delicious, it looked like "poo on toast." How do you manage to get yours to look as good as it tastes?
