Pomegranate Watermelon Salad

Alright, so I feel like I’m cheating with this idea but as soon as I tasted pomegranate I thought, “YUM! This would go great with watermelon!”

The funny thing is, and you aren’t going to believe this, I happen to have a watermelon in the middle of December. Strange I know, but the mini ones were on sale and we (the husband, the toddler and I) all LOVE watermelon.

  • 1 pomegranate
  • 1 small watermelon (about 3 cups of balls)

Clean and prepare the pomegranate as described here.

Cut the watermelon into small cubes or use a melon baller.

Combine in a bowl and serve!

The flavors are awesome together. I can see this becoming a new summer favorite with a sprinkle of fresh mint leaves!

P.S. Notice the little toddler finger scooping out the salad. He really couldn’t get enough.

    Hi Roni - the salad looks good (we've currently got no watermelons in these here parts - Montana!) but just wanted to say that I watched your video on the quesadilla and it was just really nice to actually see and hear you. I mean, photos are fine, but it is nice to hear your voice and see your expressions, etc. And I agree with one of your other commenters about having a show. You need to sign up for that Next Food Network Star contest whenever they do it again! Thanks - and I will look forward to more videos and recipes here at Green Lite Bites!

    The only bummer about that is that pomegranates are in season only from September to December. And watermelon's are in season from about mid July to MAYBE September. I'm just a food geek who doesn't like to eat out of season...or not locally grown food. So I guess it's MY problem. :o)
