
I am ALL about the leftovers this week. Every year Thanksgiving reminds me how awesome it is to cook a big meal and reap the benefits of leftovers.
This morning I made myself a simple hash for breakfast. I know everyone makes different sides and has different leftovers so you may not be able to make exactly this but the idea is the same: throw your favorites in a skillet, pull it together with some egg and enjoy.
My combo was an amazing breakfast! Here's what I did...
Ingredients
- ½ cup leftover roasted Brussels sprouts
- ½ cup leftover roasted sweet potatoes
- ½ cup leftover roasted turkey
- 1 egg, whisked
Instructions
Heat the skillet over medium-high heat. Warm the sprouts, potatoes, and turkey. Once they start to brown on the edges add egg and cook until set.
I topped it with a drizzle of sriracha for a little bite.
