Cherries are in season! At least I think they are since they are all over my grocery store. The little guy totally freaked when he saw them this weekend. He's a cherry fanatic! So we picked up a half a pound.
Normally we just eat them straight up but I was inspired tonight by a chocolate craving and a desire for dessert. Here's what I came up with. Warning: I went a picture happy...
Ingredients
- 1 whole grain sandwich thin (I found new square ones!) (you could also use a slice of bread rolled out or a tortilla)
- 1 tablespoon mini chocolate chips (14g)
- 1oz (28g) fresh cherries - about 5
Instructions
Start by pitting the cherries. Cut them in half and fish it out with a knife OR get yourself Oxo Good Grips Cherry Pitter a handy dandy cherry pitter. It's one of the few "uni-taskers" I actually use.
Once the cherries are pitted, half them.
As you'll see in all the pictures, the little guy got pretty handy with it!
Here's the cherries and the sandwhich thin (and the little guy.)
Cut the thin in half and spread the mini chips on one side.
Place the halved cherries on top on the chips. Replace the top.
Heat a skillet over medium high heat. Spray with non-stick cooking spray. Transfer the thin to the skillet. Cook for 1 minute pressing it with a spatuala or smaller pan. We used a tea kettle.
Flip and cook for an additional minute while pressing it down a bit. Cut into smaller rectangles and eat!

This sounds amazing as a dessert, and I just had a thought for a breakfast! Make a piece of french toast,cut it on a diagonal, fill it with the cherries and chocolate, cook it again just to melt the chocolate! I'm going to try it this week and let you know! haha

I just made this for a late afternoon snack (to avoid going out and purchasing somethign really unhealthy like ice cream). This really hit the spot! I see a whole new world of hot fruit sandwiches -- PB and Banana, Almond Butter and Peaches, whoo hoo!

LOL It was so good I think I was in shock when I wrote it up! It was crisp thanks to the high heat, non stick cooking spray and kid pressure. 😉 The inside was warm and gooey-ish. The chocolate mixed with the cherry that almost seem to melt a bit. It was perfectly simply and delicious.
