Greek Yogurt Parfait

Why Hello Stranger! I'm so sorry I've been MIA. Funny enough my absence was to attend the BlogHer Food Conference in Seattle. It was awesome! I went, I ate, I learned, I networked, I had a blast! Click here to see some of my recaps.

I arrived home inspired but coming off a red eye, I had no time, desire or energy to cook. Instead I made a quick yogurt parfait. Chobani was an exhibitor at the conference and they had a yogurt bar that was to die for! It convinced me that I don't need to buy cups of artificially sweetened yogurt. A tub of fat free greek, some fresh fruit a little honey is amazing! Greek Yogurt Parfait

So on the way home from the airport I stopped at the grocery store to pick up a few supplies instead of the the drive-thru and made myself an amazing breakfast. Here's what I did...

  • 1 cup fresh berries (I used strawberries and blackberries)
  • ½ cup Fat Free Yogurt (I used Greek)
  • ½ oz Almonds chopped (14g)
  • 1 tbsp Cocoa Nibs (Found in the spice isle, can use mini chips chopped up)
  • ½ tbsp honey (14g)

Layer all the ingredients starting with berries. I did berries, yogurt, almond, cocoa nibs, honey and repeated until I was out of ingredients saving a small dollop of yogurt for the top.

Greek Yogurt Parfait - close up

If you are new to cocoa nibs, they are simply cracked cocoa beans, unsweetened. A great way to add a little chocolate hint with a fun texture.

Little Guy doesn't like them so he asked for his own parfait with more berries, less yogurt and no cocoa nibs. His wish was my command. 🙂

Other combos I've been dreaming up for yogurt parfaits...

  • Banana slices, cocoa nibs, peanuts
  • Diced apple and cinnamon toast crunch
  • Mango and granola
  • Walnuts, raspeberries and honey

Yummy! I should try this. I really like the Chobani Champions vanilla chocolate chip greek yogurt but I will try this with the cocoa nibs. Sounds delish!

They are a little butter but with the berries you just get a fun chocolate crunch. I'm really falling in love with them!

Yum looks delish! Do the cocoa nibs have a bitter taste like dark chocolate?

This looks great! I love yogurt parfaits - such a fun way to indulge without going completely overboard on sweets! And I love that you added in some fiber-licious berries. Yum!

Yiu inspired me to finally get into smoothies. Even though your post is about parfait I wanted to share. I bought a blender called the nutribullet. It's like the magic bullet on steroids. I had kale, frozen mango chunks, some chia, and some kefir. Voila! Yum. I did add a tsp of cocoa powder after. I love the special dark. Thanks for the inspiration. I lost 65 lbs, and have to lose like 40 more and I've been stuck. I'm hoping smoothies with change things up a bit.

Oh man, you were in my city and I didn't even know it! =(

I love plain Greek yogurt, but usually mix it with frozen berries because it sorta goes all icecream-like. Yum.

I have a hard time with it too but it's the only "suga cereal" I buy for the boys. SO it's a treat every few months. Thankfully my husband usually finishes before I get a chance to have a bowl. lol

I've been using plain Chobani lately too (stay tuned for my post). I never would have thought to use coooa nibs -- I will give that a try, but I cannot keep Cinnamon Toast Crunch in my house ....
