
It's my birthday and I HAD to bake a cake.
Just had to.
Of course I can't bake a "normal" cake because that would be too easy and too, well, full of calories. So I made myself a fun marbled cake using my favorite baking mixes from Vitalicious.
Now, don't get me wrong, I have nothing against "normal" cakes. I eat them all the time BUT I'm coming off a very indulgent vacation and I live with a man who doesn't eat baked goods unless they come in shrink wrap. SO when I bake it's got to be something I don't mind eating mostly by myself and believe me, I don't mind eating this cake mostly by myself. (Although Little Guy is doing some damage!)
I made this combination before (although I changed it up a little this time) in a video with Little Guy who still loves it. He helped me again yesterday. Here's what we did…
Ingredients
- 5 egg whites (separated)
- 2 ¼ cups of water (separated)
- 1 ripe banana mashed
- 1 box of Deep&Velvety Chocolate VitaBrownie Mix
- 1 box of Sugar Free Banana Nut VitaMix
Instructions
Preheat oven to 400 degrees
Spray an 11x9 baking dish with non-stick spray.
Separate the egg whites, 2 in one bowl and 3 in the other.
In the bowl with 3 egg whites add the mashed banana an 1 cup of water. Whisk until frothy.
In the bowl with 2 egg whites add 1 ¼ cups of water and whisk until frothy.
Add the Banana Nut mix to the bowl with the 3 egg whites and banana. Add the brownie mix to the bowl with the 2 egg whites.
Mix each bowl to make the batter. Taste when necessary.
Plop the batters in the baking dish alternating types.
Using a butter knife swirl the batters together.
Bake about 30 minutes until the top gets crusty and a toothpick comes out clean when inserted int he middle.
Cut and enjoy with the one you love. 🙂

It looks super yummy. I never find these cake mixes at the store. Do you go to a specialty store for them. The most I've seen are the frozen muffin tops in the freezer section. By the way Happy Birthday
