
I ran out of eggs! Me!
No, you don't understand. I NEVER run out of eggs. I have an egg system. I always have a dozen in use, a dozen in the back of the fridge and when I buy more I rotate.
At the end of the week, the dozen in use gets hard boiled, the dozen in the back becomes the dozen in use and the new dozen gets put in the back. I've been successfully doing this for months now without a problem.
So when I went to grab my back-up dozen to make a big New Year's Day breakfast and it was gone I was in shock.
Then it hit me: holiday baking season!
D'oh!
Instead of my very typical egg-based breakfast, I decided to have a little fun and make "chia pudding" to kick off my new year.
I tried to get the kids on board but they both chose cereal after trying a bite. They just couldn't get over the chia texture which, in their defense, does take some time. The 2-year-old seemed more into than his older brother, taking 2-3 bites before asking for Cheerios.
As for me, well, I loved this so much I made it again today! I'm thinking I'll put it into rotation for breakfast because my .
Spinach Egg Cake Breakfast is getting a little boring.
Here's what I did…
Ingredients
- 2 tablespoon chia seeds (26g)
- ½ cup frozen wild blueberries (70g)
- ½ cup unsweetened vanilla almond milk
- ¼ oz (7g) slivered almonds
- ¼ oz (7g) cocoa nibs
Instructions
Put the chia seeds, blueberries and almond milk in a bowl.
Mix everything up and let it sit for at least 2 minutes.
The frozen blueberries will stick together; just break them up with the spoon.
After a few minutes the chia seeds will thicken the milk and the blueberries will defrost some.
Top with the almonds and cocoa nibs.
Photo note: I put the final dish by the window, which is why it looks WAY better than the step-by-step photos. I need more natural light in my kitchen. It makes a HUGE difference!
If chia seeds and cocoa nibs are new to you, take another look at your local grocery store. They are both getting more and more popular. If not a natural foods store will definitely carry them or you can always purchase them online. Both are invaluable pantry additions in my opinion.

Totally. You can really top it with anything you like. A few mini chip or even chocolate sprinkles would be fun!
