I owe this burst of breakfast video inspiration to Tiger. She was helping me defunk and in return I hope I've done the same for her.
May I present, Breakfast Pizza… (written recipe below the video)
Here's what I did...
Ingredients
- 1 tortilla (your favorite kind will work, I'm sure)
- 1 egg
- 1 egg white
- Handful of baby spinach chopped
- 1 tablespoon bacon bits
- About 2 tablespoon store bought salsa
- ¼ oz shredded cheddar cheese
Instructions
Preheat the boiler.
Lay the tortilla on a strip of aluminum foiled and brown in the oven for about 5 minute to get it crispy.
Whisk the egg and egg white together with a pinch of salt and some black pepper.
Spray a non-stick frying pan with non-stick cooking spray and heat over medium-high. Add the spinach and bacon bits and cook until wilted.
Check on the tortilla!
Add the eggs to the pan and scramble by continuously turning with a spatula.
Spread the salsa on the crisp tortilla. Top with the eggs and sprinkle on the cheese. Pop back into the oven for about 1 minute.

It was just a standard size. Not a small corn shell taco size and not the big burrito size but something in between. Honestly, I'm not sure it has a size category besides "tortilla."

Just tried this - FANTASTIC & easy 🙂 Even though I charred my first tortilla ( guess my broiler is hotter than I thought!) This is just what I needed this morning. Something that was not sweet and the little kick of the salsa was an added plus. Thanks for this idea Roni! I have a bunch of tortillas that I need to use up so this will be on my list for the week.
I have a little tip for not wasting egg yokes when you just want the whites. You can save the egg yokes in your fridge and then freeze them. I usually try and freeze two or three at a time. Then if you have a recipe that needs just egg yokes or more yokes than whole eggs, just take the egg yokes out and let them defrost and you'll have yokes! Sometimes I make lemon curd with them and it always works out.

I haven't watched the video yet but WOW this looks SOOOO good. You must be using smaller tortillas. I buy the larger ones at my grocery store and they're 4pnts each - loooove them. My husband is in charge of weekend breakfasts now so I'm definitely sending this recipe to him.

This looks so good and I can't wait to try it out too! I also get stuck in a rut with my breakfast routine. I send my 7 yr old out the door and then I feed the baby and get caught up in other stuff that seems more important at the time. Then I look at the clock and it's almost 11! Brunch???? lol I have some flat out bread, but I'm thinking I could share with my kiddo in the morning and it would be fun for him because it would be pizza! I need to go buy some tortillas now. I make something similar but instead of salsa I use red chile sauce or green chile sauce (depending on my mood) but that could be a New Mexico thing. 🙂 Bueno has a great frozen red and green chile or in a jar in the international aisle of the grocery store. It's worth a try. If not, email me and I will send you some to try! It gives you so many more options.
