    Beet Smoothie With Blueberries and Pineapple

    I posted about  this quick smoothie idea on my weight-loss blog but it's so good I have to share it here, too. I've literally made it daily since coming up with the idea last week.

    Yes. It's THAT good BUT, you have to kinda be into beets.

    This isn't one of those "hide the healthy stuff in a smoothie" ideas. The healthy stuff is beets and this smoothie tastes like beets -- in a good way!

    Listen, I get the beet-hate. Have you seen my old post where I made beets for the first time? Click here to see it. The Husband's face alone is worth the click. Seriously.

    It took me a long time to embrace beets but now I can't get enough and I'm glad! From all the research I've done online beets can lower blood pressure, boost stamina, fight inflammation, have anti-cancer properties, are rich in valuable nutrients and fiber and can aid in detoxification.

    As The Husband says every time I make them, "Beets can't be beat!" -- Yes, it gets old. *eye roll*

    Anyway, this smoothie is SO easy, low calorie and full of fiber, protein, vitamin K, riboflavin, folate, selenium, vitamin C and manganese, it's a powerhouse!

    Here's what I did,

    Ingredients

    • 1 cooked (roasted or boiled) beet 2.5 oz (72 grams)
    • About ½ cup frozen blueberries (75g)
    • About ½ cup fresh pineapple, cut into chunks (75g)
    • 3 tablespoon pasteurized liquid egg white (from carton)  (46g)

    Instructions

    Put everything in the blender. Blend.

    That's it!

    Note: It's best to but the beets and pineapple closest to the blade and then the frozen blueberries. This will help prevent the dreaded blade spin with nothing processing.

    I did get both kids to try it because it looked super yummy… 

    …but they were not into the beet flavor at all.

    I can only hope they someday see the light, as I have. 🙂

      k, i love your recipes. you aren't afraid to try weird stuff. love this! i tried your cocoa dusted banana and loved that too. i have 3 kids, so these simple ideas are perfect!

      Would canned beets be acceptable? I love beets but don't really have the time to cook fresh ones. Unless you have a quick, easy and clean way to do it?!

        Totally! I actually forgot to mention in the post that I found cooked beets at Costco that are super yummy. That's what I used. That being said, roasting beet really isn't that hard.       This sounds wonderful! Nevet thought of having a beet smoothie - you bet I will now 🙂
      The only thing I think that I would do is replace the egg with greek yogurt - that the same amount of greek yogurt. Any thought Roni?

        That would work but it will probably be a bit more tart. You may also have to add a liquid to help get things going in the blender.

      This sounds good, think I will try it today. What does the the liquid egg white do? Just not sure if I want to add that. Thank you

        It adds a little liquid and protein for very little calories. There's no taste to it and it helps make it more "smoothie-like" in texture.
